Weekend Recap: Yoga Flowin’ for a good cause with a side of PB & J Rice Cakes.

hi all! Happy Monday! One of my inspirations Lori Harder said it best in her facebook post this morning;
If you’re like me, my TO-DO lists are always ridiculously long. Instead of looking at tasks as “barriers” between me & my day, I look at them as an accomplishment when I complete one. It’s amazing what the shift in attitude can do.
After spending the weekend on the couch, I got hit with a random head cold, I felt a lot better yesterday & was very productive! Having an awesome snack totally helped the situation. Let me introduce you to heaven in your mouth – PB & J Power Rice Cakes!
*Brown rice cake topped with peanut fluff (1/4 cup protein plus peanut flour (16g of protein!) mixed with a few TB of water until thick with a sprinkle of sea salt & dash of liquid stevia) topped with strawberries, & a drizzle of coconut nectar!
I ate two of them & loved every bite.

On Sunday, after making breakfast for the family & myself, I headed to a meeting which means BIG things are coming! I am so excited. This week a certain things should be finalized and I am hoping to share the news within the next few weeks! *Insert awkward happy fist pump*
After the meeting, I went to a yoga benefit for a local Giant Breed Dog Rescue. It was a great turn out & it felt good to sweat out my weekend.

After an hour of power yoga, we were greeted by some of the dogs from the rescue. When they say Giant, they aren’t kidding. My friend Sarah got surrounded & I think the cookie in her hand had something to do with it.
My friend Neen, who I’ve talked about before, is such an animal lover! I knew when I saw these dogs that Neen would be all over it. She is an amazing woman with such a love for the environment & animals.
After the benefit I headed home to dinner with the family! My brother & sister-in-law came over and Papacakes worked his magic on the grill! I love when it starts to get nice outside because I know that grill will make many appearances.
Papacakes made grilled pork tenderloin for the family with some grilled eggplant & portabella mushrooms. We also roasted up some yummy rosemary veggies! A mix of red onion, yellow squash, zucchini, potatoes, & beets with coconut oil, rosemary, salt & pepper to taste. I also had some lentils that were un-pictured!
These roasted veggies were so simple to make!
- Just chop up veggies of choice & put into a big foil baking dish.
- Melt some coconut oil & mix into veggies with spices of choice.
- Roast covered at 400 degrees for about 45-50 minutes depending on how tender you want your veg!
- EAT & ENJOY!
I wanted to send a special shout-out today to my best friend since kindergarten, Kate! Looking back on the last 17 years, we have been through so much & I am beyond blessed with our friendship.
So, I hope you enjoy your Monday! I am headed to CrossFit later on & then grabbing some Mexican food with a friend! YUM!
