Blogger meet-up recap & Peanut Butter Pumpkin Plantain Powercake!

Say that Blog post title 3 times fast Before we get to that delicious recipe, I wanted to recap my dinner meet-up last night with my girl Alexis from FitPossible! It’s such a small world; Alexis actually lived down the street from me until she was 3 years old and then moved to Florida. We eventually got in touch via our blogs & couldn’t wait to finally “meet” in person when she came home to visit this week!
Before meeting at Mad Mex Restaurant, I hit up Trader Joes which happens to be right down the street from there!
*Picked up some veggies, fruit, basil, rosemary, dried cherries, brown rice wraps,
kimchee, lentils, lemons, avocado, & frozen veggies!
It was so great to spend some time with Alexis and her fiancé!
We talked for a good 2 hours & enjoyed the night.
Being a part of this FitFluential community has led me to meet so many amazing people & I am truly blessed.
*Dinner was a big portabella salad with sprouts, avocado,
& a side of black beans which I poured all over top!

Now for the recipe!
So, I know it’s been a while since I’ve posted a Powercake recipe! Lately I’ve been reviewing & testing out different forms of protein powders from different companies. With new flavors on hand, I got in the kitchen and did some experimenting.
I was sent Complete Veggie Protein Powder from APS [All Pro Science].

APS offers a ton of different natural supplements to choose from. I don’t take too many “supplements” but I do often have a serving of protein powder once a day or every other day. I was able to try the Complete Veggie Protein Powder & the Complete Super Food Powder. They also have other options such as Grass Fed Whey Protein which I know a lot of fitness enthusiasts are drawn too if they are able to handle dairy!
I enjoyed the complete super food powder in the morning right when I woke up! It also went well in smoothies as did the the vanilla veggie protein. I figured since the vanilla protein worked well in smoothies, it would be a good addition to some baked goods.
Not only is the summer months good for fresh blueberries & strawberries, but FIGS are everywhere too! I couldn’t help but pair my new recipe along with some figs & peanut fluff for a killer combo. Inspired by my 3 Ingredient Plantain Flatbread, I used half of the recipe to make a POWERCAKE that serves 1-2!
Ingredients:
1 small/medium plantain (greenish/yellowish in color)
1 Scoop of APS Vanilla Complete Veggie Protein Powder
3/4 Cup Milk Of Choice
1/4 cup pumpkin puree
2 TB Flax
1/2 tsp baking powder
a few drops of liquid stevia
Sprinkle of cinnamon
Directions:
1) Put all ingredients into a blender
2) Blend until smooth – may need to add a bit more liquid if too thick.
3) Let sit for a few minutes so the flax will gel
4) Pour into a greased glass pie pan
5) Bake 375 degrees 25-30 minutes
6) Let Cool
4) Topped with Peanut Fluff & fresh chopped figs!
