Sushi, Headbands, & Very Berry Plant Based Jell-O

Hi all! I hope you’re enjoying your weekend! Thanks for all of the motivating comments on my CrossFit 13.1 WOD performance! I can’t wait to see what next weeks challenge is. Even if you don’t do CrossFit, my hope is that you will find what you love to do and get after it!
Today is a rest day- for suuuure. My body is asking for it & I am listening! Nothing like having this for dinner Saturday night then sleeping in on a Sunday!
Because really, sushi night is always a good night, right?
This Sushi totally hit the spot after my AM CrossFit workout & teaching a TRX Bootcamp yesterday! Always looking to refuel that body. We enjoyed edamame, seaweed salad (my favorite), & I had some veggie rolls! A glass of red wine may have been involved as well.

After teaching my TRX class yesterday morning, my sister-in-law & I put up the new BN_SHAPE magnets on the wall for the members to take! Strategically placed right above the towels so they couldn’t miss them! The magnets read “Abs are made in the kitchen!” #truth
I also spy a leopard print BAMR BANDS headband from my girl Katie! She was part of the #plantPOWER Giveaway last month & it’s safe to say I am OBSESSED with these headbands. They do not move- ever. It’s really amazing. Andddd the super cute fabric is a total plus. People say my sister-in-law Angie and I resemble each other and with out headbands that is even more of a truth now! Totally didn’t plan the matching but I wasn’t against it at all!
I absolutely love supporting small business’s that I believe in! Which, speaking of small businesses, big things are happening with mine and EVENTUALLY I will be able to share! I promise. I am working super hard behind the scenes to turn my vision into a reality. As much as I didn’t realize what really goes into what I wanted to do – it is worth every single small step we are taking.
Saw this the other day from my girls the purely twins & I loved it. Anything you believe you can do – chances are YOU CAN. Just take those steps! Sometimes the things we want the most, scare us the most. But like my girl Heather would say, WE are the ones coming up with those fears. I find myself repeating often “Get out of MY own way, Kasey.” Often we are the ones holding ourselves back. So dream it and go for it!
mmmmK, back to my blog post After working out twice, I was starving once I got home! On the ride back, Mamacakes & I totally enjoyed the sunny weather and had the sunroof down for the first time! Best. Day. Ever. I made a huge #powerbowl & had some of my new fruit recipe. I was inspired by my girls the @PurelyTwins and their amazing looking marshmallows! I had some agar flakes in my pantry and new it was a good sub for gelatin so I gave this a shot- and it worked!
What are Agar flakes you ask?
Up until not too long ago, I wasn’t sure what they were either – but I am so glad I found them!
Agar is a seaweed. Sea vegetables have this way of binding ingredients together & are a healthy addition to your diet!

“Agar Agar Flakes (Kanten) is a vegetable gelatin made of a variety of sea vegetables with strong thickening properties. The seaweeds are boiled to a gel, pressed, dried and crushed into flakes.Perfect for desserts, pie fillings, baked good fillings, puddings, parfaits, fruit or vegetable aspic, and more. The flakes dissolve in hot liquids, and thicken as it cools.” [source]
You can find these at whole foods or any natural food store. Agar powder would also work, but you would use less. Probably 1 TB or so of the powder would do the trick! Or you can use gelatin too.

Ingredients
- 2 Cups of Frozen or Fresh fruit
- I used frozen mixed berries
- 2 Cups of Water
- 4 TB Agar Flakes
- could sub gelatin or 1-2 TB agar powder
- Juice of one orange (about 1/4 cup)
- Zest of 1 orange
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 15-20 drops of liquid stevia (or 2-4 packets)
- You could sub 1-2 TB of sweetener of choice!
Directions
- In a medium sauce pan on medium-high heat, combine your fruit & water and bring to a boil on the stove.
- Once boiling, reduce the temperature to low simmer & stir in your agar flakes, orange juice, orange zest, vanilla, cinnamon, & stevia until combined.
- Let simmer for at least 3-4 minutes while stirring occasionally & then take pan off of the heat.
- Pour fruit mixture into whatever kind of container you choose – since the mixture was still hot, I put it into a glass bowl.
- Put the liquid mixture into the fridge and let sit for a few hours. (The mixture will “gel” as it cools in the fridge)
- Once it’s cooled, remove from bowl & ENJOY!
