Zucchini Power Brownie Fudge Bars!

Good morning everyone! Glad you enjoyed my recap of Rome.
Gosh, I think I spent about 3 hours yesterday just going through old pictures & memories of my trip. One of those once in a life time experiences that I hope to turn into a “twice in a lifetime” experience! Any takers on being my travel partner? #thingsimseriousabout
Yesterday I enjoyed a beautiful #PowerbowlADay of baked kale, spinach, tomatoes, red onion,
red pepper, black beans, butternut squash, kalamata olives, green goddess dressing, & hemp seeds!
Perfect way to fuel up for an at home WOD! Speaking of CrossFit, over the weekend, we had an awesome partner WOD.
We picked a partner & had to work together on the workout.
My partner was Neen, who is so strong & beautiful!
I’ve posted about her before & she was such a great partner! She once competed in fitness competitions, as well as being a former gymnast. You can tell right away what an amazing athlete she is when she does the WODS. From day one I was inspired by her. Throughout the whole workout, we cheered each other on. Our system was to each do 10 reps of the exercise and then switch off to let the other one catch our breath.
If I did the math correctly, the workout was 150 reps total that we divided in half.
I was a sweaty mess at the end of it & loved watching all of the other partners work together to achieve their goals.
Neen also eats plant based & at the end of the workout she laughed & said,
“Let’s go write #plantPOWER as our team name on the board!”
We both agree that since eating mostly plant based, our workouts feel amazing & our recovery time is so much quicker. I plan on writing a detailed post about this & that conversation totally inspired me to do so! Anyway, after the WOD, we had a St. Patrick’s Day cookout for the owners birthday.
There were a lot of Whole Foods containers, paleo treats, veggies, hummus, edamame, slow cooked bacon with cabbage, fruit…
& a new recipe creation that I made for everyone.
I was inspired by the Purely Twins brownies & just used ingredients I had around the house.
Makes 16-20 bars
Ingredients:

1 cup protein powder
-
½ cup cacao powder
-
1/2 cup grated zuchinni
-
¼ cup oat flour
-
¼ cup coconut flour
-
2 teaspoons oranic dried coffee (optional, but brings out the chocolate flavor)

1 teaspoon baking soda
-
1 teaspoon baking powder
-
2 teaspoon cinnamon
-
1 egg or 1 flax gel
-
(1½ tbsp flax gel with 3 tbsp water, let sit to make gel)

½ cup applesauce (4 oz)
-
½ cup pure maple syrup (you can use any sweetener of choice)

Coconut nectar would be yummy too!!

½ cup hot water (added at the end)
Instructions

Place all ingredients into a bowl and mix together but end with adding hot water.

The batter will seem almost “dry” but make sure to add a splash of water to bind it together. I promise they don’t come out dry!

Spread the batter into a lightly coconut oil greased 11×7 baking dish.

Bake at 350 for 30 minutes.

Cut into 16-20 slices. Store in refrigerator if you have left overs.
These brownies came out so delish & fudge like! I am a fan & will be making these again.
