Friday Favorites [Self Love & Banana Berry Powercakes via Vitamix]

hey all! Happy FRIDAY! Any fun plans this weekend? I’ve got some girl time planned as well as family time this weekend – and throw in a 10 mile run on Saturday! I’m typing it to keep my self accountable. One of my best friends Kaitlin is joining me so I’m excited to get after it together!

This week, I could honestly LOAD this post with favorites because it was such an inspiring week – but for the sake of the fact that I’ve got a short break between a jam packed day of clients, I’ll keep it to the point Winking smile

First off-  SO proud of my NH girls continuing this #BODYpeaceMovement!! They posted notes on the mirrors throughout the girls bathrooms in the high school with positive messages.

Second – LOVE that the students used the leftover chia jam from Wednesday’s workshop to make smoothies in class!

4th – I’ve got a new recipe for you for the Week Of Vitamix Recipes! We’re already over 1,000 entries for the Vitamix which is a NEW Powercakes record! You guys rock.

I couldn’t wait to use the S30 Vitamix to pulse up some Oats for Oat flour that go into Powercakes! I created a simple recipe below utilizing the Vitamix Blender.

BANANA BERRY POWERCAKES

[Banana Berry Powercakes]

Ingredients:

  • 2 Eggs
  • 3/4 Cup Oats (pulsed into flour)
  • 1 Banana
  • 1/2 Scoop of VEGA Vanilla Protein Powder (about 2 TB)
  • 1 Spoonful of Flax Meal (flax seeds pulsed into flax meal)
  • Cinnamon To Taste
  • 5 Strawberries

Directions:

  1. I first made the flax meal (thanks to Vitamix for sending me some flax to pulse!) by adding the flax seeds into the S30 & turning on speed 1. Then slowly turn the blender up to higher speeds until the flax is pulsed.
  2. I then made the Oat Flour by adding Rolled Oats into the Vitamix & turning to setting 1 (low speed). Honestly, that’s all it takes to make flour! A few seconds on setting 1 and you’re done! (I sound like an infomercial Winking smile) But for real – it works!
  3. Next, put just the banana & eggs into the blender & mix until combined.
  4. Pour the wet mixture into a bowl with your oats, flax, protein powder, & cinnamon.
  5. Next, add in some chopped strawberries & mix until combined.
  6. If you think the batter is too thick at this point, feel free to add some milk of choice until a nice smooth consistency!
  7. Heat your powercakes on a medium/low greased pan (could use any oil or spray of choice) on one side for a few minutes.
  8. Once they start to cook through and you see bubbles appear, flip to the other side & cook for a few minutes until golden brown.
  9. Serve with any toppings! I made some VEGA pudding by adding the rest of the scoop of powder with coconut milk. I also topped them with some coconut oil. YUM!
