On our last day of the Conference,
we started with a breakfast buffet of
Better Whey Of Life Greek yogurt,
LOVEGROWN Granola,
& Driscoll’s berries!!

Then we attended some lectures with AMAZING information.

During the presentation;
I snacked on a POWER EGG BOWL with some berries!

After an amazing day, we spent the rest of the night at a local park
after grabbing some whole foods to eat on our GOODNESS KNOWS yoga mat
while relaxing to jazz music!

talking with some of these amazing girls!
What an amazing experience!!
This morning I headed down to the hotel fitness center
fueled up with some NRG MATRIX all natural drink mix
& did 2 miles on the treadmill!
Afterwards, I met mamacakes for some breakfast
where I had a pre-made POWER EGG BOWL with some coffee
(with my own stevia packet – do you bring stevia in your purse!?)
& a bowl of oats with walnuts, cinnamon, berries, & maple syrup!!
YUM, I love refueling!! ![]()

My favorite meatless meals would probably include tempeh or tofu. I love them both!

Love the idea of mirror less Mondays. Its hard not to be obsessed with the scale. I’m so bummed I missed the last day of the conference. Looks like I missed some good info. Oh, and I’m going to try some powercakes!
I love meals made with beans! I’m a bean fanatic. Luckily my mom fixes them a lot and I love to put the leftovers in my daily salad #POWERBOWL. So glad you had fun at the conference. I loved seeing all your pics over the weekend on FB/Twitter, and wish I could’ve been there too and hung out with you all. Maybe another time when I have more plane ticket $ and vacation time!

I am not so much meatless BUT I do eat Greek yogurt or oatmeal with protein powder mixed in OUR my homemade protein goodies!

@lithidaisy’s Sweet Potato Stew:
Ingreds:
2 sweet potatoes, peeled/cubed
2-3 cloves garlic, minced,
1 onion, diced
1 green pepper
1 zucchini, sliced
sliced mushrooms
1 bunch kale (remove stems) – I often use spinach instead
2 1/2 cups vegetable broth
1 can of diced tomatoes, drained
1 can lentils,drained/rinsed
1 tbsp olive oil
1 tbsp curry powder (I add a tbsp of hot curry paste too)
2 cups cooked quinoa
1 tsp cumin
other spices I just throw in = tumeric, pepper, garlic powder
1/2 cup fresh coriander
Heat oil in large saucepan. Add garlic, onion, gr. pepper, zucchini. Cook until softened. Add sweet potatoes. Sprinkle with curry, flour, cumin, pepper, tumeric. Stir and cook for 30 sec. Stir in broth, Bring to boil. Reduce heat. Simmer for 15 min or until potatoes are softened. Add lentils. Fold in kale. Cook until heated through. Sprinkle with coriander.
To be honest, I don’t measure the ingredients to strictly, and often sub-out for what I have in the cupboard. But this makes enough for a family of 4 – if not more!
