These women & men were so inspirational.
It’s amazing to see how hard we all work for what we do;
We all have a common passion for being influential to others!

  1. I always carry stevia in my purse! It comes in handy 🙂 My favorite meatless meals would probably include tempeh or tofu. I love them both!

  2. Carissa says:

Love ya girl! So happy to have met you and I can’t wait to see you again soon. Safe travels! I love those quotes you used..what a weekend!

  3. Kristen says:

Love the idea of mirror less Mondays. Its hard not to be obsessed with the scale. I’m so bummed I missed the last day of the conference. Looks like I missed some good info. Oh, and I’m going to try some powercakes! 😉

  4. Caitlin says:

I love meals made with beans! I’m a bean fanatic. Luckily my mom fixes them a lot and I love to put the leftovers in my daily salad #POWERBOWL. So glad you had fun at the conference. I loved seeing all your pics over the weekend on FB/Twitter, and wish I could’ve been there too and hung out with you all. Maybe another time when I have more plane ticket $ and vacation time!

  5. I’ve been following your posts all weekend on your FB and Instagram– looks like you had so much fun!!

  6. LOVE your posts! Me – carry my NuNatural stevia everywhere!!! LOVE your quotes at end & pinned & tweeted!

I am not so much meatless BUT I do eat Greek yogurt or oatmeal with protein powder mixed in OUR my homemade protein goodies! 🙂

  7. Melissa says:

I always carry stevia with me! Looks like you had a great time :), and I especially love your last quote, powerful!

  8. I am TOTALLY the same! I always have a little baggy in my purse full of stevia packets 🙂 You never know when you’ll need to sweeten something up the healthy way!

  9. Sarah says:

I love this meatless meal so much, we have it at least 3x a month! I thought I’d share it with all you Powercakes followers – enjoy! xoxo

    @lithidaisy’s Sweet Potato Stew:
    Ingreds:
    2 sweet potatoes, peeled/cubed
    2-3 cloves garlic, minced,
    1 onion, diced
    1 green pepper
    1 zucchini, sliced
    sliced mushrooms
1 bunch kale (remove stems) – I often use spinach instead
    2 1/2 cups vegetable broth
1 can of diced tomatoes, drained
    1 can lentils,drained/rinsed
    1 tbsp olive oil
1 tbsp curry powder (I add a tbsp of hot curry paste too)
    2 cups cooked quinoa
    1 tsp cumin
other spices I just throw in = tumeric, pepper, garlic powder
    1/2 cup fresh coriander

Heat oil in large saucepan. Add garlic, onion, gr. pepper, zucchini. Cook until softened. Add sweet potatoes. Sprinkle with curry, flour, cumin, pepper, tumeric. Stir and cook for 30 sec. Stir in broth, Bring to boil. Reduce heat. Simmer for 15 min or until potatoes are softened. Add lentils. Fold in kale. Cook until heated through. Sprinkle with coriander.

To be honest, I don’t measure the ingredients to strictly, and often sub-out for what I have in the cupboard. But this makes enough for a family of 4 – if not more!

  10. Hey there! Thank you for the shout out – and the pic! 😛 I’m trying to find ANYONE who recorded video of the Q&A but I have had no luck so far :/ I really want to share it with my subscribers!

I LOVE LOVE how you take so many photos; it REALLY makes the post so interesting 😀 And of course, being in videos and all, I think it’s a given how visual I am for learning and retaining info haha

    Take care!

  11. It sounds like this was such an amazing experience, Kasey. Thanks for recapping everything! 🙂

I love what you took out of the experience. Both lessons are so true!

  12. So happy you had a wonderful trip & learned a lot of things! I am excited to see what the “next step” you are referring to is… ?! But I am always here to support you for the ride 🙂 Fly home safely!

  13. Melissa says:
