Catching up & a Butternut Basil Brown Rice Wrap!

Happy Thursday everyone! How’s your week been going?

You know what’s funny, as much as I post pictures to instagram, I still have tons waiting in line to be seen. In honor of all of the recipes on deck (referring to my high school track days where that means you were next in line), next week I am going to have a WEEK OF RECIPES where I will high light a new recipe each day!

Also, since it is Throwback Thursday – I’m going to throwback alllllll the way to last week Winking smile My girls Sarah, Jackie, & I all went out to dinner for Jackie’s Birthday. We went to a place called Industry & they had an awesome menu. IMG_4143

& a side of roasted brussels which I then added to the big bowl.

Can we also notice the HUGE bowl is came in – as if they knew I loved #powerbowls or something!

We headed for a walk after dinner down the street to check out some cute shops.

The moment I saw this adorable change purse – I obviously couldn’t pass it up!

Goes perfectly with the #WHATSBEAUTIFUL campaign I’m working on with Under Armour & FitFluential.

Also saw this awesome poster that one day will be on a wall of mine.

Currently taking my passion & working on it – I’ve realized sometimes things we’re most passionate about creating take time to create to make sure they are what we want them to be. When I started my passion project, I assumed if I had an idea – I could get it together & ready in a few months. I’ve come to find that my idea will take some more time because more people are involved than just me. BUT once it’s ready – You better believe you will know about it Winking smile cause I may be yelling from the rooftops to let everyone know!

Anyway, back to my post! Fast forward to yesterday where I had an awesome workout at the gym. (I usually do CrossFit a few days a week & then hit the gym on some other days as well.) I like all kinds of fitness and sometimes I’m in the mood for a good solo lift sesh with the music in my ears & rockin

 BN SHAPE tank. Cause there really is not a better feeling than being in shape, healthy, & happy!

After a good chest & plyo workout, I stopped by a local health food store & grabbed some snacks! These cruncha mame things are SO GOOD! They are freeze dried edamame – which make a perfect crunch onto #powerbowls. Also Mary’s gone Crackers were on sale for $.99!! I may or may not have bought a few  multiple boxes.

Once I got home, I had in my mind what I wanted to eat. Definitely wanted to get some good carbs in my body to fuel/repair those muscles. I saw a squash wrap the other day on [Pinterest] that inspired me to try one that is similar to my Creamy Kabocha Squash Collard Wrap. I opened my fridge to grab out different ingredients that I already had prepped waiting in the fridge & some brown rice wraps that I already bought – then magic was created.

Ingredients:

  • 1 Brown Rice Wrap (or wrap of choice)
  • Roasted butternut squash
    • Probably about 1 1/2 cups total
    • Previously washed, chopped, & roasted at 350 for about 50 minutes.
  • Roasted Asparagus Spears
    • Previously roasted at 350 for about 15 minutes.
  • Sautéed Kale
    • Previously sautéed with some garlic & some coconut oil
  • A handful of fresh basil
  • A few spoonfuls of garlic hummus
  • A sprinkle of nutritional yeast – coupon code XUG228 for Iherb.com first time users! 

Directions:

  • Place wrap onto a plate & fill with the above ingredients.
  • Tightly wrap the wrap so that it is almost “sealed”

  • Place onto a medium heat pan & put a plate on top of the wrap to push it down so it gets crunchy on one side.
  • Then flip the wrap over with a spatula and sear on the other side.

I enjoyed this out on the deck while catching up on some computer work.

I swear it was one of the best lunches I’ve had in awhile – other than my beloved powerbowls!
