Weekend Eats & Random Food Combos.

For those who participated & followed along with the #RESTWEEK challenge; thank you!
It was a success & my body is definitely rested & ready to get back into my workouts with a new appreciation for my body & listening to it.

Not sure if you’re like me, but I tend to be a picture hoarder. My camera roll is jam packed & takes up most of my phone space! I was looking back at my pics from this weekend & realized I had a ton of good food pictures I wanted to share along with some new food combos! I think it these will just go to show that the beauty of clean eating is that most combinations work together!

On Friday, my mom & I were out all day at business meetings but obviously made time to stop for a yummy lunch! We stopped at our favorite Mediterranean spot and got homemade hummus (SO AMAZING), with a side of raw veggies, & a spinach salad with sprouts, mushrooms, & homemade olive oil dressing.

Later that night I met some CrossFit ladies for a dinner at the Cheesecake Factory! I got a roasted veggie salad with asparagus, edamame, beets, tomatoes, cucumber, & I asked for added avocado with my oil & vinegar on the side! Lots of pepper was added on top as well – I love fresh cracked pepper!

Once Saturday rolled around, I started my day off with a GREEN SMOOTHIE & a few hours later I was hungry for a snack! I was headed to finally redeem my Christmas gift from my boyfriend which was a spa package! I knew that I wanted something light so I had two brown rice cakes topped with coconut oil, pumpkin puree, & cinnamon! Tasted like pumpkin pie Winking smile. Oh & my spa day was amazing – I felt like a princess! I had a mud wrap, massage, & facial. I could totally get used to that…in a dream world, right?

Sunday morning came & I was visiting my boyfriend so I only brought some random foods from my fridge at home. I was craving a big sweet potato so I stuffed it with Peanut Fluff, Healthy Chocolate Sauce, & Coconut butter with cinnamon! OH EM GEE – this combo was amazing!

  • Peanut fluff = 1/4 peanut flour mixed with about 1/4 cup water, liquid stevia, & a sprinkle of sea salt.

While the boyfriend was working, I ran some errands & picked up groceries for dinner. I obvi had to stop to grab an unsweet green tea from starbs.

Got back & was hungry for lunch so I looked in the fridge & literally just through together some food in a bowl & it worked! This was roasted purple brussels, roasted rutabagas, roasted parsnips, raisins, oats, & VEGA vanilla protein pudding (protein powder mixed with some water until thick) topped with cinnamon.

Random, right? But I promise, SO GOOD. I was craving sweet all day so this hit the spot.

Snacked on some juicy plums throughout the day.

The boyfriend was outside all day with a group of students so when he came home I totally spoiled him with a warm meal! I made some brown rice gluten free pasta topped with organic tomato & basil sauce, sautéed eggplant & caramelized onions.

I just cooked the veggies in coconut oil & garlic and mixed them into the sauce which I topped with fresh basil.

I served this with a side of red wine & roasted asparagus;

  • Sprinkled with sea salt & pepper & roasted in a 350 degree oven for about 15-20 minutes!

I also had some small red lettuce wedges that I cut in half and topped with some olives & homemade

“Cheesy” Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 2 TB Olive Oil
  • 1 TB Dijon Mustard
  • Juice of 1/2 of a lemon
  • a Few Drops of Liquid Stevia
  • Fresh cracked pepper

Also wanted to shout out to my best friend Sarah who is running in the Boston Marathon today!! I know she will do amazing! This picture was after she ran her second marathon and I met her at the finish with powercakes in hand! Winking smile

I’m off to run some errands before CrossFit tonight – excited to be back nice & rested! I will be sharing more about this because I may have something pretty cool coming up with that along with a new product feature & giveaway tomorrow! What a way to start the week!

    I am impressed (though totally not surprised!) that the fridge had brussel sprouts (purple at that!) just hanging out *before* your shopping trip!! Food for thought and food forethought both at play here!! Thanks for giving us a little peek…! 🙂
