Purely Elizabeth [Giveaway] & Recipes!

Happy Monday all! How was your weekend? I honestly had a non-stop weekend BUT so worth it. I was with my second family, Corey & his fam, for most of the weekend along with my SRU Triathlon crew as they ran in their first mini-tri on their road to their first Triathlon!

So proud of the @srutriathlon club all competing in their mini tri yesterday! they did so awesome! Little side note: I’ve been working on a fun project with the athletes behind the scenes as they prep for their upcoming triathlons! More on that soon but also wanted to say a big thank you to VEGA for their support with this fun campaign with the students & Jen for being my amazing side-kick yesterday. You all rock.

While Corey’s family was in with us this weekend, I made them some cookies using a new mix that I tried out from my friends at Purely Elizabeth!

The instructions are super easy –

Just adding in coconut oil, applesauce, & vanilla extract to the mix makes for a delishhhhh raw cookie dough.

It’s perfectly acceptable to sneak more than one spoonful…

Bake at 350 for about 12-14 minutes.

And you’ve got some delicious cookies full of some great powerful ingredients. I borrowed this image from the website because the cookies at this house were gone before I could even snag a picture! Winking smile For real.

I also want to say that I am a huge fan of companies who take the time to show us bloggers how they appreciate our partnerships. As a small business owner myself, I know the importance of relationships & treating others with the same respect that you’d like to be treated.

Whenever I received this package on my doorstep, I thought hm, maybe they sent the giveaway product early? Which is fine! Then once I opened, I realized my name was on the card. I instantly knew that this company was full of some great people! And an adorable presentation.

This tea is SO GOOD! I love anything Chai.

And my love, coconut sugar! This is what Purely Elizabeth uses in their products to sweeten.

Obviously I’m a fan of coconut nectar as well (which you can find on iherb.com coupon code XUG228) Goes great on pancakes! Or this new recipe creation made with Purely Elizabeth’s Ancient Grain Oatmeal as my “flour”.

It contains Quinoa, Amaranth, Flax, Hemp Seeds, & Oats! I love getting that extra boost of power in my oatmeal & powercakes!

Using the Vitamix S30 – I blended the above ingredients & cooked like one big pancake on a medium heat stove, for a few minutes on each side, greased with some coconut oil. Topped with some of their famous Granola & you’re good to go.

  • 3/4 Cup Purely Elizabeth Oatmeal
  • 1 Cup Liquid Egg Whites or 2 Eggs + 1 White (I had my two dippy eggs on the side!)
  • 1/2 Banana
  • 1/2 cup Strawberries
  • 1/2 of an orange (peeled)
  • Cinnamon & Vanilla To Taste
  • Sweetener of Choice (I used some liquid stevia)
