Leftovers, Mochi Puff Sundae, & Weekend Tree Decorating!

I was up and at it this morning with a 6am spin class & then did some hamstring exercises. Tonight we have a fun networking event that will involve some chill candle lit yoga – totally my kind of networking meeting Winking smile

Now that we’re all a few days post Thanksgiving – I’d love to know some creative ways that you use your leftovers. Over the weekend, the boy & I used leftover turkey for some awesome meals! For some reason, leftovers always taste better.

We picked up some things at the grocery store to make this #POWERPLATE.

This hit the spot, especially whenever you’re starving after working hard at the gym. Making sure to #refuel  with leftover turkey, a garlic brown rice & quinoa blend (found at Walmart) just took it out of the package to heat up with some added fresh thyme & extra minced garlic), then roasted up some fresh broc on the stove on medium heat with the usual starters onions, garlic & grapeseed oil. Then added old bay, fresh thyme, & rosemary to the broccoli. Topped with Asmars baba ghannouj from Whole Foods & some kalamata olives!

I also used some leftover cranberries & turkey in a brown rice tortilla with sautéed garlic & onions with some grain mustard. YUM.

Recently I came across Mochi; or I guess you could say I finally decided to buy it! I’ve looked at it multiple times in the store but wasn’t too sure what to do with it. I have to tell you – I’m quite obsessed now.

Mochi is basically a blend of rice that is made into almost a hard cookie dough consistency. You just cut it, bake it, and it puffs up into DELICIOUS cinnamon raisin puffs! I swear – SO good. I found it at Whole Foods!

Mochi is made from whole grain brown rice and it’s also all-natural and without additives, preservatives or colorings. It’s wheat-free and gluten-free too!

I just sprayed some foil & put the dough on a cookie sheet. Just cut into 1-1/2″ squares and bake in a pre-heated 450° F oven for 8-10 minutes. Then my mochi met my coconut milk icecream & molasses.

And to answer your question – yes, this was delicious.

Since most of my last few days were filled yummy leftovers & epic desserts, we also squeezed in some time to put up our tree!

The weekend after Thanksgiving always seems to be a good weekend to decorate for the Holiday’s! Corey & I have a little “charlie brown tree” that his mom gave us. It is a little lop-sided & bent, but I think that’s why I like it so much. We decorate it with all types of ornaments & I couldn’t wait to get it out.
