Back home now gearing up for a busy weekend (did I tell you that August is a crazy month?) One of my best friends is getting married in the Fall so we’re all getting together for her Bachelorette day tomorrow – can’t wait!
The past week I was visiting Emerald Isle, North Carolina with my family – have you ever been?
It’s SO gorgeous. The beach wasn’t too busy, we had a great house for 15 of us, & the water was seriously the most PERFECT temperature. I’m usually afraid of “big things in water” but the temperature was too amazing not to spend time in the waves.
Tomorrow will be full of beach pics for Friday Favorites but today I wanted to update you on some training & some fun eats from the week!
If you haven’t guessed from the hints yet, I will be competing in my first Sprint Triathlon August 10th! So while I was at the beach, I made sure to get up extra early with the sun to get my training in before being a beach bum all day. Being fueled by my friends at VEGA for the race so thank you to them!
There is something about the easiness of beach mornings that I long for. Riding my bike & running was beautiful when you’ve got the sunrise to look at & a local coffee shop to pit stop at afterwards. I filmed a workout on the beach too so keep an eye out for that one! And post workout breakfasts with a view? Heck Yes.
Oats, Now Foods Triple Seed Mix, VEGA Vanilla Protein, Bananas, & Berries.
Throughout the week, each night was assigned for different themes and different cooks!
The “kids” night was spaghetti followed by dessert which was chocolate dipped everythanggggg. Even fingers.
I was on salad duty & I also made some gluten free chocolate cookie balls – recipe coming up this weekend!
Little Kyra boo was our waitress for the night and made some menus on plates! Our restaurant was titled Amore for the night. Gotta love the choice of “fetta” or “no fetta”. That’s what makes these moments so memorable
Salads for 15 people? No big deal. Myself, Angie, & my brother’s last night there we all went out to eat to a place called White Oak River Bistro.
Apps of fresh mozzarella & tomato with basil were amazing. There’s nothing like fresh basil in the summer!
I almost ordered Salmon for dinner, per usual, but then saw the special was Crab Cakes & instantly my mind was made up. Serves with wild rice risotto & sauteed veggies.
Pretty sure our whole family became a member of the Clean Plate Club that night – the food & staff were great! Later that night, or I guess morning, at 3am our taxi came to shuttle us to the airport to head home. Doesn’t vacation always go so quickly?
Early flight meant 1 hour of sleep followed by 2 plane rides…can you tell I was wide awake? Obviously one eye more than another.
It’s always a bummer when vacation is over, especially when you’re with your loved ones, but it just makes you that much more excited to see everyone again! I also have a pretty packed but exciting August coming up so there may be some more beach time worked in.
Me + water = happiness.
