Caramelized Onion POWERCAKES & Handstands

Hey all!
Hope you’re enjoying your weekend so far!
Yesterday I took an active rest day & walked a local lake with
my friend Sarah! We did 5 miles in about an hour & ten minutes!
It was beautiful outside …

I also went to the chiropractor yesterday,
I’ve been going since I was little & I have to admit
that I hardly ever get injured!
(knock on the nearest piece of wood)
But I really needed it because I felt like I may have strained my chest muscle
& I ‘m the kind of person that does not like to be in pain
so I figure out what is wrong ASAP.
I decided to give my upper body a rest yesterday
& I’m just going to focus on LEGS today!
Speaking of working out, the other day
MamaCAKES & I decided to throw some handstands into our work out!
We did these up against a wall & held them for 30 seconds 5 times!
These are a great total body work out
especially for your CORE because you’ve got to keep that tight to keep your balance!
I really wanted to attempt a Handstand Push-up
but my body was a little fatigued from our earlier work out
so I did a few half way handstand push-ups!
I love being able to challenge my mom & she also challenges me!

Onto the FOOOOOD:
Lately I’ve been coming up with so many clean recipes
& I can’t wait to share them all with you!!
Power Recipe of the DAY:
Savory Caramelized Onion POWERCAKES
Ingredients:
1 Red Onion
2 Cups of Almond/Coconut Milk
1.5 TB Dijon Mustard
1/4 Cup Coconut Flour
1 tsp Onion powder
Sea Salt & Pepper
Directions:
Chop your onion & caramelize in a medium-high heated pan
with olive oil & minced garlic!
Once the onions are a nice golden brown, remove from heat
& let COOL while you prep your other ingredients.
In a mixing bowl:
mix 2 cups of Almond/Coconut Milk
with 1.5 TB Dijon Mustard
In another bowl I got my dry ingredients together:
Mix the Coconut Flour with your seasonings!
COMBINE Dry Ingredients with your WET Ingredients
& your Caramelized onions!!
**After mixing, you may need to add more liquid so they form into patties and are not dry..
I added another 1/4 cup of almond/coconut milk.
Form them into POWERCAKES
& transfer onto a medium-high heated pan.
Brown for a few minutes on each side with some olive oil.
THESE WERE SO YUMMY!!
I ate a few with some hummus on top and a lean protein on the side!
I also served a few over a fresh salad!
These POWERCAKES were a part of my Sunday PREP DAY!
Along with some cauliflower mash, spaghetti squash, & roasted veggies!

I personally like them both! Some times I crave sweet but other times I crave savory.
I tend to combine a lot of sweet & savory things together!
