Roasted Eggplant & Zucchini Tortilla Pizza

hey all! I hope you’re enjoying your Wednesday! I’ve been a busy bee this week with meetings, clients, workouts, & being a driver/nurse for papacakes who recently just got knee surgery. He actually tore his meniscus on a job so I’ve been helping out by going to the doctors appointments & such with him. He’s doing well & was just going over the exercises he needs to do while rehabbing that I can totally help him with!

Today I wanted to share with you a new recipe that I’ve been wanting to for a while now! Recently I’ve been craving pizza but [surprisingly] didn’t feel like whipping up a recipe from scratch. So unlike me, right? Winking smile Anyhow, I remembered that we had brown rice tortillas in the fridge so I thought they would make a great base for a flat bread type crust.

I’ve also been on this eggplant kick & I can’t get enough! It is so delicious & sweet once it’s roasted. You should give it a try if you haven’t yet!  I was able to combine some of my favorites all into one healthy, filling, & powerful meal.

Ingredients:

  • 1 brown rice tortilla (or tortilla of choice)
  • Organic Jarred Pizza Sauce
    • Or tomato sauce mixed with 1 TB tomato paste, basil, oregano, garlic, pepper, & sea salt
  • Nutritional Yeast (optional)
    • Nutritional Yeast is non-dairy cheesy substitute loaded with B-vitamins, fiber, protein, & tons of power.
    • Fact: I sprinkle it on everything.
  • Roasted Eggplant & Zucchini
    1. Slice both vegetables
    2. spray with olive oil spray or melted coconut oil
    3. Sprinkle with fresh pepper & sea salt
    4. Roast at 375 degrees for about 30-35 minutes or until tender.

Directions:

  • Place Tortilla on a pizza pan & top with sauce, nutritional yeast, & roasted veggies.
  • Bake at 350 degrees for about 15 minutes or until tortilla is golden brown.
  • Let cool for a few minutes & use a pizza cutter to slice into 4 slices.
  • Top with other optional ingredients & ENJOY!

I topped mine with some avocado slices, raw sauerkraut, & fresh basil. YUM! Winking smile If you try this out, let me know! I’d love to see it.IMG_3062
