I got to spend a few days with this stud since the snow made it hard to get home yesterday. Last night I his wonderful mother came over for dinner so I was excited to get in the kitchen! I made us Garlic Rosemary Brussels to go along side some Salmon Burgers & Mushroom Risotto.
- 2 LB of Brussels
- 1 Red Onion
- 1 TB Minced Garlic
- 1 TB Dried Rosemary (or chopped fresh)
- 3 TB Coconut Oil
- Salt & Pepper to taste
- Wash & Chop the Brussels in half while also removing the stems.
- Add your coconut oil (or oil of choice) into a pan with the garlic.
- Heat on a medium heat.
- Add your onion into the pan & heat until a bit caramelized.
- Add your brussels, rosemary, salt, & pepper.
- Combine and continue cooking on medium until browned! DELISH.
The combo of the flavors was on point & the risotto was really creamy which was awesome! I’m glad we tried it out.
Now that I’ve got you hungry – let’s move onto the Power Plates Challenge! Today we have BEAR WALKS! I love doing these as part of my Power Hour Class. Great way to get the heart rate up & work on full body strength.

Whelp, I’m off to get some work done then to the gym before Family comes in for dinner! I had a great first workout with a new client this morning & she did awesome! Love seeing hard work & enjoyment at the same time.
