hey all! It’s DAY ONE of the #POWERBOWLCHALLENGE! Can I just say that you guys already are impressing the heck outta me? Before even going to bed last night already saw some Powerbowl posts in the Challenge Loop App!

Yesterday, after an awesome leg workout with my friend Jenna (which I will post about tomorrow), I headed to some yard sales & the Farmer’s Market with Corey’s mom! Two of my favorite things to do – just WAIT until you see what Kitchen gadget I got for $1 in a near future post (because it truly deserves it’s own spotlight)!!!
Obviously I was drawn to the squash buckets –
where I came across my long lost love, DELICATA SQUASH!
Which I found out were also known as “Sweet Potato Squash”.
As much as I love my kabocha & carnival, delicata is WAY up there too!
So much to choose from (this was just a portion of it)!
And how cute are those baby eggplants? I couldn’t pass them up.
To me, you can’t really get much more fresh than a Farmer’s Market!
After shopping, we were starving so we stopped for brunch!
[Oats, dippy eggs, fruit, broccoli, & Momma B got an awesome omelet]
It was a great day & I walked away with some awesome food – all for $13!
[Beets, tomatoes, eggplant, peppers, zucchini, peas, blueberries, & fresh basil!]
Which led me to create an epic #POWERBOWL for dinner last night.
-Sauteed tomato, zucchini, peppers, & basil in coconut oil, onion, & garlic.
-Topped with Roasted Beats –
(washed, left whole, roast @ 400 for about 40 minutes til’ tender)
-Roasted Delicata Squash-
(cut in half, scoop out seeds, roast at 400 for about 30 minutes)
-Peas, Avocado, Kale-
-Pan Seared Organic Tofu in coconut oil & dijon mustard-
(Lather dijon mustard onto tofu pieces then sear
on medium heat pan in coconut oil until crisp)
