PMAW: Greek Cauliflower Rice

Greek Cauliflower Rice
1 head of Cauliflower – “Riced”
(cut into small pieces and pulse in a food processor until rice texture)
2 Grated Carrots
2 Cups of chopped Kale
1/2 cup of pitted & chopped Kalamata Olives

Mix together with:
1/4 cup Apple Cider Vinegar
1/2 cup of Nutritional Yeast
1/4 cup EVOO
few drops of stevia or 1 TB Raw Honey
Sea Salt + Pepper
This was a great combo & a way to get the veggies into your day!
I added on some tuna & extra olives to make it a #powermeal for lunch!

our plan:
make powercakes for breakfast,
head out for the afternoon to shop for some groceries to make dinner
& I’m sure a nice bottle of well deserved wine will be opened!
