[Gluten Free] Cookie Ball Truffles!

hey all! Happy Saturday! Last night’s Bachelorette party was super fun –

I’ll post more pics tomorrow but for today, I’ve got a new recipe for you that I created at the beach this past week!

Cookie Ball Truffles, anyone?

And gluten free for those who are intolerant. These can truly be made with any cookie of your choice! Each night we were assigned to different meals and the kids were in charge of Spaghetti & chocolate dipped anything & everything. A few weeks ago I had these TO DIE FOR oreo balls made by Corey’s nephew & his nephew’s girlfriend – and ever since then, I’ve had them on my mind to make as soon as possible.

They involve getting a bit down & dirty with your hands so have a sink & hand soap near by. One of the perks of this recipe? They are seriously THREE ingredients! Plus +1 if you add pecans like I did to some of them. SO simple.

Ingredients:

  • 1 Package of cookies of choice (oreos, gluten free cookies, shortbread, etc.)
  • 1 Package of room temp. Cream Cheese of your choice.
  • Chocolate to melt & dip into
  • Toppings to roll them in.

Directions:

  1. Make your packaged cookies into breadcrumbs (I just used my hands to crumble them in a Ziploc bag.)
  2. Add your room temp. cream cheese block to your cookie crumbs in a bowl.
  3. Combine until smooth mixture is formed.
  4. Use your hands & get dirty by making them into ball shapes.
  5. Place the truffles on a wax paper lined cookie sheet or pan.
  6. Pop into the freezer and let firm up for about 2 hours.
  7. Once firm, melt your chocolate (I made a double boiler with a little bit of water boiling in the bottom pan and then a dry pan on top where you add in the chocolate chips.) Melt the chocolate on LOW heat (like setting 2 out of 10) until melted & smooth. (you’ll see below what happens if you heat it too quick!)
  8. Use a spoon or spatula and drop the cookie balls into the chocolate, cover with chocolate, & roll into toppings or leave plain.
  9. Put the cookie balls back onto your wax lined sheet & pop into freezer for another 45min-1 hour until solid.
  10. They are SO rich & creamy – that’s where the “truffle” term came into play!
  11. Store in the fridge or freezer.

These are truly SO simple, they just take some patience to let them sit in the freezer to be ready. If you’re looking for a quick dessert to make in a pinch or if you’re craving some chocolate – these are a sure GO TO!

I believe in enjoying all types of food in moderation  while finding what works for you.  For too long I restricted myself from enjoying things like cookies, chocolate, & cream cheese. So now, I listen to my mind & if I want a treat – I don’t feel bad enjoying it! I fuel my body and then always allow room for enjoyable recipes. If cookies + cream cheese doesn’t float your boat or preference, no big deal! Just sharing all kinds of recipes up in hereeee Winking smile
