Deconstructed Sushi Roll Powerbowl

Hi all! Happy Saturday – today I’m headed to go wedding dress shopping with one of my best friends from College, Courtney! She gets married next October so I’m super excited to be a part of her big dress shopping day! Side note: Courtney & Corey have been neighbors since they were little, went to high school together, & then Courtney introduced me to Corey in college when he came to visit our school for her birthday. Isn’t it such a small world?
Anyway, last night whenever I finally got to Corey’s, we were both hungry but I was in the mood for a simple meal that didn’t take too much time.
I stopped at Wal-Mart on the way up & grabbed frozen edamame, some tomatoes, onion, kale, avocado, & rice for a Sushi Roll Powerbowl!
Just prepared the rice, cooked the tomatoes & onion together with garlic & oil in a pan until tender, then baked some kale just like this recipe. Topped with avocado & coconut aminos and before you know it, you’ve got yourself a POWERBOWL!
The coconut aminos are a great alternative to soy sauce – I actually love soy sauce but the coconut aminos is sweeter so I tend to favor it. You can find it on iherb.com here with coupon code XUG228.
