Coconut Flour Valentines POWERCAKE!

Hi all!
Hope you’re having a good Tuesday!Oh yeah, &
HAPPY VALENTINES DAY!I’m pretty luck to have an awesome Valentine ;]

So yesterday was another successful

So onto the
VALENTINES DAY
POWERCAKE

I used…

2 TB Coconut Flour
1 TB Flax
2 TB Cocoa Powder
2 TB Pumpkin Puree
1 TB Psyllium Husk
(helps hold the gluten free flour together,
but you can sub corn starch)
1 tsp Baking Powder
5 Egg Whites
Grated Orange zest
(brings out the chocolate flavor!)
1/2 cup of milk of choice
or
(I used 2 cups of water,
sometimes a little more
I pretty much just mix it in until
it gets to a thick consistency
because the Psyllium husk will
SOAK UP so much water)

& of course
Cinnamon, Vanilla, & Stevia

Mix all Ingredients & put into a baking pan,
Bake at 350 degrees for 35 minutes
or until cooked through.

I topped mine with a little
protein frosting & some
STRAWBERRY CHIA JAM!
