Anyway, today is POWERMEAL A WEEK RECIPE LINK UP!

Today I wanted to share a new creation;

CARROT CAKE POWERBALLS!

Combine

1 cup Soaked Dates
(soaked mine in about 2 cups of water over night
in the fridge & then removed pits)

1/4 Cup Unsweet Coconut Flakes

3 Carrot Sticks (chopped)

1/2 Cup Soaked Nuts
(I used Brazil Nuts –
just soak over night in enough water to cover all nuts in the fridge)


**Nuts are easier to digest when you soak them & they blend better! Winking smile

Sprinkle of Cinnamon, Nutmeg, Ginger, & Cloves!

I like spices so I don’t really measure these – sprinkle to taste!

Blend in a food processer until combined
– if it’s too dry, add some of the liquid from your Soaked Dates!

Soaked Date Simple Syrup
The liquid left over from your soaked dates can also be used as a simple syrup!

I used about 2-2.5 cups of water over the 1 cup of dates
and then saved the liquid after wards!
Great natural sweetener for drinks or other recipes! Winking smile
I ended up adding some back into the recipe to make it stick together more!

Form your sticky dough into POWERBALLS
& then roll in some more coconut!
