Happy Saturday all! How’s your weekend going?
This morning my girl Kaitlin & I met up at the park to run our big 10 miles in preparation for the Half Marathon coming up in TWO WEEKS! Geez oh man, where did the time go? At first I thought I’d take on 10 miles alone but honestly being with a buddy made the run go so much faster & way more fun.
Obviously every run isn’t complete without a post 10 miler-crazy-haired-selfie. #OWNIT
They put up a beautiful bench in the park in honor of our friend Kyle, so we made sure to run by and touch it for luck each time we passed it.
Did I mention that 10 miles is the longest I’ve ever run for? My knees started to act up a bit but my plan is to really rest and recover so I can get a few more lower runs in before the half.
My foam roller & I will be hanging out a lot the next few days…
So let’s talk about peanut butter, shall we? I mean really…unless you’re allergic or don’t like it, peanut butter makes the world go round. It also is good fuel the night before a big run – justttt saying. I guess my title of this post should be “Will run 10 miles AFTER the peanut butter.”
Thanks to the new Vitamix S30, I think I’m forever going to make my own at home. SO EASY! My parents and I can’t get over it. I purchased Organic Peanuts at Whole Foods bulk section the other day in preparation for the big peanut butter making day.
Obviously Abby was pumped too.
I used about 2.5 cups of organic peanuts added into the container.
- Pour seeds or nuts into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High, using the tamper to push the ingredients into the blades. (this is KEY!)
- In 1 minute, you will hear a high pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change from a high pitch to a low laboring sound. Stop machine.
- CAUTION: Over processing will cause overheating to your machine. Do not process for more than 1 minute after mixture starts circulating freely.
Store in an airtight container. It can also be frozen for longer storage.
We also added a dash of sea salt which is optional but it’s nice to be able to control the amount of sodium in the peanut butter.
