RAW WALNUT PESTO And SAVORY YAMCAKE

ROUND 6 OF POWERMEAL A WEEK CHALLENGE!

So excited to share with you a SAVORY

YAM POWERCAKE

1 cooked yam
350 degrees for about 35-40 minutes
1 TB coconut flour
2 TB chopped red onion
2 TB Shredded Carrots
2 TB Shredded Zuchinni
Sea Salt & Pepper To Taste
3 egg white
(to hold it together)

Mix ingredients and form into a POWERCAKE
put into a medium heat pan with 1 tsp coconut oil
and cook on each side until browned!

Topped this with a dippy egg, side of steamed brussels, and some

RAW WALNUT PESTO

2 handfuls of Fresh Basil
1/4 or 1/2 cup Extra Virgin Olive Oil
1 tsp minced garlic
Juice from 1/2 of a lemon
1 Cup of Raw Walnuts
Sea Salt & Pepper to taste

*Blend all ingredients in a food processor
you may need to add more or less of the
EVOO depending on your desired consistency!

*I mixed the PESTO in my VEGGIE NOODLES

And topped some KABOCHA SQUASH (finally found some at Whole Foods)
& FRESH TOMATOES along side 2 dippy eggs topped with SEA KELP seasoning!

    PS<i CANNOT wait for the winter squashes to make their arrival again! Are you a huge fan?? I can eat kabocha ALL the time! i found princess pumpkin squash today. I'll take it as a close second! :)

      hey girl !I have coconut flour powercakes along with microwaved ones with egg whites! I also add cocoa powder and stevia to eggs at night to make a carb-free omelet! ;]
