OKAY, I'm SOO excited about this
POWERPUMPKIN
ROLL
RECIPE!!
(gluten free)
I've eaten it 2 days in a row for breakfast! ;]
* Disclaimer: For some reason my AWESOME computer is on a delay...
so it's like one of those old movies where the mouth moves before the words come out
I apologize ;] but the excitement is there!
PowerPumpkin Roll
DRY INGREDIENTS:
1/4 cup Gluten Free Oat Flour
(grind up gluten free oats)
2 TB Ground Flax Seed Meal
1 TB Protein Powder
(I used Sunwarrior)
2 tsp Xanthan Gum
(can sub Corn Starch)
1/2 tsp Baking Powder
1/2 tsp Baking Soda
WET INGREDIENTS:
1/2 Cup Pure Pumpkin
5 Egg Whites
Splash of Pure Vanilla Extract
Sprinkles of:
Cinnamon
Ground Gloves
Ginger
&
Stevia
(I used 2 tsp of my NuNaturals Stevia -
this is really sweet but you can
sub 2 TB Agave, honey, sugar, etc...)
For the
CHIA VANILLA FROSTING
3/4 cup Greek Yogurt
1-2 TB Chia Seeds
Splash of Coconut Milk(or other liquid)Sprinkles of:
cinnamon & clovesSplash of:
Pure Vanilla Extract
2 Packets of Stevia
(you can add 1/2 tsp Xanthan gum to make it thicker!)
*Mix all ingredients & let sit in the fridge for like 20ish minutes to thicken up.
*THE LONGER IT SITS, THE THICKER IT GETS !!
(I made my frosting last night & let it sit for 1 hour in the fridge)
HOW TO MAKE THE
POWERPUMPKIN ROLL:
1) Preheat oven to 350 Degrees
2) Measure 1/4 cup Rolled Oats
& put into Magic Bullet
(or food processor)

Grind until turned into a FLOUR
3) Mix your DRY INGREDIENTS in a Bowl
4) Add in your WET INGREDIENTS!
& MIX TOGETHER!
5) Line a Baking Pan with Parchment Paper
& Spray parchment with cooking spray!
6) Spread Batter onto the Parchment
in a shape like this...
7) Bake at 350 Degrees for 13 Minutes
Lay out a Kitchen Towel &
Sprinkle with Cinnamon
9) Take the Pumpkin Roll out of the oven and IMMEDIATELY
Flip onto the towel
(be careful not to burn yourself!!)
10) Peel back the Parchment Paper SLOWLY

11) ROLL up the pumpkin roll with the towel!
12) LET COOL
(can put into fridge for like 20 minutes)
13) Once COOLED, UNROLL the pumpkin roll
& fill with
CHIA FROSTING!!
14) ROLL the PUMPKIN ROLL BACK UP!
15) CUT into PIECES!
*I served mine up POST WORKOUT with some veggies!!
*CHECK OUT THE NUTRITION STATS
ON THIS ONE!

nutrients, & NO ADDED SUGAR

Hey! I tried making this today…but mine did not turn out AT ALL
I must have done something wrong. The icing tasted like straight up stevia and plain yogurt. Do you think it would be better if I used a different filling? I had to throw it away; maybe I used too much sweetener? But I L-O-V-E the idea! It was so creative! And I am going to try and make it again for sure using a different filling
awe I’m sorry it didn’t work!! Everyone else seems to be ok with the recipe, maybe it was too much stevia for you? hm! I wish I could send you a fresh one!! ;]

I followed the directions and my batter came out salty. Should I half the baking soda/powder next time?
ya i had the same problem with it being extremely salty…..2 tsp or each of those seemed to be a lot after looking at it so next time im gonna half or even quarter it and see if it helps.

yay!!!! i was so dissappointed cuz i knew it was gonna taste so good…so im definelty remaking this one tomorrow….the greek yogurt filling seriously could pass for cream cheese frosting….love it!!!

So I pinned this recipe on pinterest a while ago thinking that I really wanted to try it, but then I completely forgot about it. But i saw it yesterday and realized I had everything to make this and i am SO GLAD I DID. this is seriously fantastic. i absolutely love it!! perfect fall breakfast, especially since the frosting tastes exactly like cream cheese frosting! I’m seriously so excited about this
my neighbor gave me a pumkin roll yesterday i did not refridgerate it till today is it safe to eat now.
