LEAN GREEN POWERCAKES
In the Magic Bullet I blended;
2 TB Coconut Flour
1 TB CHIA SEEDS
½ cup of FROZEN SPINACH
6 Egg Whites
¼ cup Unsweetened Coconut Milk
(you sub any liquid here)
½ tsp Baking Powder
Sprinkles & Dashes of
Cinnamon, Vanilla, & Liquid Vanilla Stevia
I also used 1 tsp of Xanthan Gum
(You could sub corn starch here or not use it at all,
I think it just helps hold the gluten free Coconut Flour together!)
After blended, I pour onto a medium high pan sprayed with some olive oil
and cook on each side until browned!
(a few minutes on each side)
Topped with peanut fluff & healthy chocolate sauce!
talk about a POWER breakfast!

A great way to incorporate your veggies into your pancakes!
