Coconut & Chocolate Covered Banana PowerOats!

Hey all! Today is Day one of my WEEK OF RECIPES!
First up is Chocolate Covered Banana PowerOats!
I love the combo of chocolate, coconut, & banana! It’s like a tropical dessert for breakfast.
Ingredients:

1/2 cup of rolled oats

3 TB Chia seeds
-
1 cup liquid of choice
-
2 TB Coconut butter
-
1 Banana
-
Cinnamon to taste
-
Stevia to taste
Directions:

I made overnight oats with the first 3 ingredients.

Mix together and let sit over night so it will “gel” with the chia seeds.

You could also cook it all together & then let sit over night as well.

In the morning, add stevia & cinnamon to taste.

Chop a banana & add on top.

Melt down the coconut butter (in the microwave for 25 seconds or over the stove on low until melted)

Add coconut butter drizzle then put into the freezer for a few minutes and it will make a hard shell.

After frozen, top with healthy chocolate sauce & enjoy!!
