Hey all! Today is Day one of my WEEK OF RECIPES!


First up is Chocolate Covered Banana PowerOats!

I love the combo of chocolate, coconut, & banana! It’s like a tropical dessert for breakfast.




  • I made overnight oats with the first 3 ingredients.
  • Mix together and let sit over night so it will “gel” with the chia seeds.
  • You could also cook it all together & then let sit over night as well.
  • In the morning, add stevia & cinnamon to taste.
  • Chop a banana & add on top.
  • Melt down the coconut butter (in the microwave for 25 seconds or over the stove on low until melted)
  • Add coconut butter drizzle then put into the freezer for a few minutes and it will make a hard shell.
  • After frozen, top with healthy chocolate sauce & enjoy!!
