Carrot Cake POWERCAKES

WHIP 4 Egg Whites
with 1 tsp Cream of Tarter & 1 tsp Xanthan Gum
(optional, but helps it hold)
until STIFF PEAKS!

 like so…
 Then fold in:
2 TB Ground Flax
1/2 Cup Rolled Oats
1 TB Coconut Flour
(sub protein powder or other flour)
1 Grated Carrot
2 TSP Baking Powder
Cinnamon/Ginger/Cloves
Vanilla
Stevia
(or other sweetener)
 *I also added some frozen Kale
(totally optional though!)

3) Spoon the mix onto a pan & SPRAY the pan.

I forgot to spray the foil,oops!
 Bake @ 400 degrees for about 15-20 minutes!
*These are pretty much baked pancakes or kinda like a biscuit ;]

what would a word for that be?

 4) Let cool & then TOP with your choice of TOPPINGS!
*I chose protein powder frosting (duh)
& some of my Cranberry Chia Jam!
