Cacao Carrot Pumpkin Spice POWERCOOKIES.

Not very often do we combine those words into a phrase, right?

Well let’s look on the bright side..

It’s a short work week & Thanksgiving is just a few days away!

To kick off this week of food lovin’ I thought I’d share with you a new recipe.

I have been loving the “cookie” idea for breakfast;
which are basically mini powercakes!

So I couldn’t help but share with you a healthy alternative to cookies
which combine the spices of thanksgiving with the POWER of a balanced meal!

Cacao Carrot Pumpkin Spice
POWERCOOKIES

Loaded with fiber, protein, healthy fats, & clean carbs!
Gluten free, dairy free, egg free, & nut free!
Hence the POWER! Winking smile

Wet Ingredients:

3/4 cup grated carrots
3/4 cup pumpkin
2 Cups of Coconut Milk (or other nut milk)
1 Cup of water
2 tsp vanilla extract
zest of one small orange
juice of 1 small orange
1 TB Raw Apple Cider Vinegar
A few drops of liquid stevia
& vanilla liquid stevia
(you can also add 2 TB sweetener of choice)

Dry:
1/2 Cup Coconut Flour
1/2 Cup of Rolled Oats
1/4 Cup Flax Meal
1 TB psyllium husk powder
(or a chia seeds)
2 tsp Cinnamon
2 tsp Pumpkin Pie Spice
1 tsp baking powder
1/4 tsp sea salt

Optional Add-ins-
Which I highly suggest adding in

1/4 cup Raisins
1/4 cup Cacao Nibs
(or chocolate chips of choice)

Mix & Let sit to thicken.
Spoon onto a greased cookie sheet
*I spray my sheet with coconut oil spray from whole foods.

Bake at 350 for about 35 minutes.

Let sit to cool for a good 15-30 minutes
they will get more FIRM while they sit!
I also suggest letting them sit in the fridge
for about 30min - 1 hour to let cool and set.

I usually make mine in advance and once cool,
I store them in containers in the fridge!

I stacked a few up with protein powder frosting
(protein powder mixed with water and chia seeds to make thick)
for my post workout breakfast!

    I was so excited to try this recipie out when I read it. It’s everything I like. I used nothing but the best quality ingredients and I’m sad to say they turned out a mess. Did anyone have success with this recipe or an experience like mine? So bummed.

      When I made them they came out of the oven-and cooled-a gooey, sticky mess.
      Here’s how I fixed it:
      Heat oven to low(around 160.) Put a cooling rack on a cookie sheet, put the cookies UPSIDE DOWN on the rack(the cookie bottoms were the biggest mess.) Put them into the warmed oven. TURN OFF OVEN. I left them in the oven overnight. In the morning the cookies had dried out but still soft. They were really yummy with a drizzle of Agava Nectar over them. Perhaps increasing the flour, oats, psyllium husk would also work but, like you, I had a batch already made and wanted to salvage them.

      hi ladies! So sorry for the mis-hap! I suggest that you let them sit to COOL for a while after they cook! The psyllium husk is know to be gooey (especially out of the oven) until it sets up. I also suggest putting them into the fridge for about an hour and they should set up great! That’s how mine usually work out :] I hope this helps you both!!! <3 I like to make mine in advance and store them in the fridge!
