Today I wanted to share with you my
weekend recap along with a new RECIPE!

Not only did I get to spend time with the boy this weekend,
but I also got to spend some time with his mother!

She is absolutely adorable & the QUEEN of garage sales,
antique stores, & consignment shops!

She can spot a deal a mile away and always has the cutest clothes & decorations for her home!

I am constantly asking where she got things and she loves to tell me about the deals she finds.

Yesterday I got to spend the afternoon with her
& we headed out for a girls day of shopping!

I am not going to lie, I have no bought myself new clothes/shoes in forever!
I may or may not spend most of my money on food my business!
You all know I love my powerfoods – but I’ve been a good girl and saving my money!

We started out at a consignment shop that was absolutely adorable!
We probably spent about an hour just looking around.

I am pretty proud of my purchases.

New wallet – $12
Fingerless Gloves – $5
Vintage Ring – $7
Nine West Hipster Bag – $10
Ankle Boots – $20
All of this for $54.00!

I could not pass up this adorable bag! I love side bags.

And this ring was way too cool to not buy!
& it fit perfectly which is even more of a reason that it was meant to be.

It felt good to treat myself with some new practical purchases
WHILE saving money at the same time!
Double win.

After shopping all morning we hit up Panera for some lunch!

I got a classic salad with olives & some black bean soup!

After getting back, the boy & I headed out to my second home the grocery store!

We picked up a bunch of fresh veggies
& a jar of organic tomato basil sauce!

Ready for the easiest dinner ever?
Saute the veggies in oil of choice with some minced garlic.
Pour in the sauce & mix together.
Add in 1/4 cup of Nutritional Yeast to the sauce.
Serve over noodles of choice!

I had some left over mung bean noodles
(I get them at a local health food store but you can also find online)
They have 20g of protein per serving! YAY!

Topped it with some kalamata olives & a side of roasted asparagus.
Just spray with oil of choice and roast in the oven at 350 for about 15 minutes!

The boy had some venison on his, which I don’t judge!
Because it’s all about #beTRUEtoYOU!

We were craving something different for dessert.
The apples & pears were looking mighty fine in the store,
so I grabbed and few and made such a simple #plantPOWER dessert!

Just cut the pear in half.

Sprinkle with cinnamon.

Lay face down on a cookie sheet.

Bake at 375 for about 20-25 minutes.

Top with Healthy Chocolate Sauce

& chopped pecans!

For the boy, I made a stuffed apple!

Just cut out the center of the apple.

Stuff with some raisins & cinnamon.

Bake at 375 for about 30-35 minutes.

Top with chopped nuts!

So easy & healthy!!
