Weekend Favorites! Fitness, Waffles, Pizza, & Pumpkin Muffins!

Happy Monday friends! Hope you’re having a great start to your week. Can you believe it’s already Thanksgiving in a few days? I swear yesterday it was August.

This weekend was full of some eats & fitness – which is pretty usual. I got some good training in, got creative in the kitchen, & my clients had some GREAT sessions!

1 ) I mentioned my clients had some great workouts and they DID! My soccer girls crushed a Saturday circuit day. Here you see Maya rocking some Kettlebell Carries (Farmer Walks).

Don’t let this “walking” picture deceive you — this is a super challenging exercise for your whole body, especially the CORE.

I actually incorporated them into my training as well. Key is to keep your core stabilized as you walk back & forth holding a load. The looks can be deceiving because these are super challenging & take some “tuning in” with your core and if you’re anything like Maya, it’s always with a smile on her face.

2 ) Pre-training doughnut! Saturday’s are doughnut morning’s here thanks to a local cafe who makes them fresh every Saturday.  This week’s pick was a coffee cake doughnut.

3) Flat bread pizza thanks to Flatout breads! I love picking up their Rosemary & Olive Oil pizza crusts and making our own pizza.

Here I had sauce, spinach, fresh basil, applegate turkey pepperoni, & kalamata olives.

Does anyone else use extra sauce to dip into? I love extra sauce.

4 ) White Chocolate Protein Waffles? Yes please.

I used the p28 White Chocolate mix from the Protein Pantry (Vitamin Shoppe) to make pumpkin waffles topped with kerrygold butter, side of fluffy eggs, & bacon. A gingerbead candle also makes things that much more cozy.

5 ) Recent snack lovin’ = Chocolate Chip Cookie Dough B UP Bar & Banana Sandwich.

Take your B UP bar, smooth out with parchment paper, bake at 350 for about 4-5 minutes until browned. Once out of the oven, take your banana and sanwhich between your bar.

6 ) White Chocolate Pumpkin Muffins & BOGO Peanut Flour!

To celebrate, I used my pure PB to make WHITE CHOCOLATE PEANUT BUTTER PUMPKIN MUFFINS.

RECIPE:
– 1/2 cup @crazyrichardspb PURE PB
– 1 cup oat flour
– 1/2 cup pumpkin purée
– 2 eggs
– 3/4 cup @dannon Triple Zero Vanilla yogurt (my favorite
– 1/2 cup @nowfoodsofficial sugarless sugar stevia baking blend
– 1/2 cup @traderjoeslist white chocolate chips
– 1 tsp vanilla extract
– 1 TB cinnamon

DIRECTIONS:

1️) Combine wet ingredients thoroughly & then add them to your dry.
2️) use an ice cream scoop to help scoop your mixture into your lined muffin pan. (I spray my muffin liners as well).
3️) bake @ 350 degrees for 15-20 minutes or until golden brown.
4️) TIP‼️ Drizzle each muffin with maple syrup or syrup of choice before baking — you will thank me.
