Happy Wednesday all! I hope you’re having a great day. Just wanted to start off by saying THANK YOU for all of the support with the launch of my Powercakes Shop & tanks!! So many more cool things to come but this is just the beginning & it’s all thanks to your support.

Did you know that today was “bring your cat to the gym day”? ha! Don’t worry, my cat Abby made sure I remembered.

Anyone else have an animal that loves being inside of things? I swear Abby spends more time in bags than in her bed we have for her. And for the record, I promise the gym bag wasn’t full of gym clothes. We just got back from Baltimore & she jumped into this bag before we could even put it away! I will be recapping our trip tomorrow because I’ve got so many recipes saved up to share that I couldn’t wait! Winking smile

Speaking of recipes, the #POWERBOWLCHALLENGE is still going strong!

@Fuel_For_Thought is always sharing some awesome combos. This one was roasted eggplant, delicata squash (hiyoo!), green beans, edamame, corn, tomatoes, avocado, and spiced tofu sprinkled with hemp hearts & nutritional yeast.

Since today is Wednesday, I thought it was fitting to make WAFFLES for Waffle Wednesday. Although this is not out of the norm since my $1 waffle maker is my favorite kitchen gadget. I can’t get enough of them!

My friends from All Pro Science sent me their new Dutch Chocolate Veggie Protein Powder to experiment with which is obviously right up my ally since I love me some chocolate.

I combined my Pumpkin Buckwheat Waffle Recipe with the Protein Powder & Peanut Flour to make Dutch Chocolate & PB WAFFLES.

Addition of:

With the addition of more “dry ingredients” I always add in more liquid until a nice thick batter forms.

Topped these with some Peanut Fluff & had some nice coffee along side.

Not only do I love Peanut Butter & Chocolate together, but I am a fan of Mint Chocolate as well! Working at an ice cream shop all throughout high school & college, I had a love for all flavors of ice cream. Mint Chocolate Chip was one of my favorite so I recreated it using my FRONANA recipe!

One recipe of the FRONANA base with the addition of:

  • 1 Few Leaves of Fresh Mint (You could also add mint extract if that floats your boat!)
  • An extra few TB of almond milk until desired consistency.

In true #POWERBOWL fashion, you know I had an extra few spoonful’s of Sunflower seed butter hidden underneath as well Winking smile The combo of chocolate and mint with the sweetness from the banana was super refreshing after a long day!
