PowerMeal A Day- “PowerLunch” Sushi Roll Stir-Fry

so Today’s JUNE POWERMEAL A DAY TOPIC
is POWERLUNCH!

The other day I literally whipped this up in about 20 minutes!

SUSHI ROLL STIR-FRY
serves 2
Ingredients:

1 Bag of Miracle Rice
(you can sub 1 cup of COOKED brown rice)

1 cup of chopped peppers
1/2 cup of chopped red onion
1/2 can of water chestnuts
3 Cups Fresh Spinach
2 sheets of  ripped up NORI (seaweed)
1 tsp Chopped Garlic
1 TB coconut Oil
3 TB Sesame Seeds
2 TB Coconut Aminos
(you can sub soy sauce)

Sautee garlic, coconut oil, rice, & all veggies together until cooked through.

Add in ripped up NORI with the 2 tablespoons of Coconut Aminos

”Fry” until cooked together – about 10-15 minutes on medium heat

Then I added 1 can of my FAVORITE wild Alaskan salmon!

& served it with some steamed peas & some diced avocado!

It’s basically a deconstructed Sushi Roll!! Winking smile

  1. Hey Kasey! Thanks for the shoulder tip! I’m actually going to be heading to the gym in a few to work my shoulders, so I’m going to incorporate the superset! I checked out the protein powder, I love that it has hardly any extra unnecessary ingredients, any idea if it would be suitable for people who are lactose intolerant? I know whey is usually hit or miss when it comes to lactose. I just did a 10 day PowerMeal round up on my blog, check it out if you get a chance! 🙂

  3. Such a good idea! I love stir-fries, too; they are just so easy and flavorful! Question: where do you get your Miracle Rice? That looks awesome.

      jessica-hi-i’m in a smallish city and we have SHIRITAKI, (aka miracle rice-brand name) at 2 local groceries that i am aware of. (natural pantry and sagaya’s) it is probably available here elsewhere. try natural health and asian groceries. it is a japanese product, i think-it comes in fetuccine, spaghetti and rice shapes and as a block for bigger pieces-but i’m not sure what to do with those yet-we didn’t care for it cut any thicker than the noodles.
