Single Serve Cherry Chocolate Chunk Cookie!

Happy Sunday everyone! I hope you’re having a great weekend. I am currently super busy getting some last minute things together before leaving for CALI next week! I am so excited, if you can’t tell. With running around like a crazy lady the past few days and getting in some awesome workouts, I’ve been fueling my body with what it’s been craving & loving it!

One of the big challenges that I’ve been working on the last few years with myself is the whole “carbs before bed” fear that I used to have around my competing days. Even though I am not as in fear as I once was, I still wanted to challenge myself to be ok with eating carbs before bed if that’s what my body wanted. Now, I’m not a scientist but from what I’ve researched, it’s okay to consume carbs before bed, especially if you work out at night to refuel those muscles. A lot of people I think fear that the carbs will be stored as fat, but I’ve personally been consuming carbs before bed to make sure I’m getting enough in my day & guess what – I’m ok Winking smile This is not me saying you NEED to eat carbs before bed, this is just me sharing my stories of what I’ve personally been doing to challenge myself. I am not saying go and eat 1 million calories before bed, I am just saying that I’ve been working on having a carb filled snack before bed to refuel & also fuel for the next day and my body is liking it! #BETRUETOYOU Red heart

With that being said, the other night I was craving a childhood favorite – Oatmeal Raisin cookies smothered with peanut butter. Such an amazing combo! I remember going into the kitchen, grabbing two cookies, & sandwich some peanut butter in between for the perfect dessert. I was on mission to recreate this combo & made up a single serving cookie, which you can choose to share but I personally did not – sorry fam!

I also was out of raisins though, merp! Who am I? Luckily I had some dried unsweetened cherries from Trader Joe’s that go perfectly with chocolate. Also, this recipe is SUPER simple to make & not a lot of ingredients.

Ingredients:

  • 1/3 pumpkin puree
    • (Could probably sub banana or applesauce)
  • 1/4 Oat Flour (oats pulsed until a flour consistency)
  • 1/4 Rolled Oats (not pulsed)
  • 1 or 2 Squares of Dark Chocolate of choice chopped
  • 1/3 cup Dried Cherries
  • 2 tsp cinnamon
  • 10 drops of liquid stevia
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder

Directions:

  • Combine all of the above ingredients in a bowl.
  • Put the cookie dough onto a sprayed parchment lined cookie sheet.
  • Shape into one BIG POWER COOKIE (or multiple mini ones)
  • Bake at 375 for about 14-16 minutes or until browned.
  • Let cool & I suggest enjoying with a big glob of peanut butter! Winking smile
