Today’s JUNE POWERMEAL A DAY TOPIC is
SIDE DISH
Two of my favorite side dishes are:

First up,
Roasted Veggies
(I make these on Sunday's and they last me for the beginning part of the week!)
I just take a few bags of frozen veggies
(or fresh)
put them onto a pan, spray with olive oil
& cook at 350 Degrees for an hour!
so easy & yummy!
Next,
GRILLED BRUSSELS

He is the KING of grilling around here
He recently has been making these grilled brussel sprouts
& they are TOO DIE FOR.
They are so simple & easy!
-
Just chop the brussel sprouts which ever way you’d like
-
put into a foil pan
-
add 1/4 cup olive oil
-
shake a sprinkle of Sea Salt & Pepper
-
Next, cover the foil pan with a layer of foil
-
Place onto the grill on LOW heat
-
I like mine tender so sometimes I leave them on for 30 minutes,
but they will get all caramelized & delicious!
You can do this with any veggies but brussels are killer on the grill!
So special shout out to papacakes for Father’s Day
& maybe one day I can be on his level of grilling!

What are your favorite Power Side Dishes?!


















1) Oven-roasted asparagus with olive oil, salt, pepper, and a ton of fresh garlic. Serve hot.
2) Oven-roasted cauliflower with olive oil, salt, pepper, and a ton of turmeric. Serve hot, but cold leftovers are pretty awesome, too (and are a great addition to a spinach salad).
3) Oven-roasted beets with olive oil, salt, pepper, a touch of balsamic vinegar. Serve with a few toasted walnuts or pecans. This is excellent hot or cold.
4) Cucumber salad with onions, fresh dill, a little olive oil, salt, and pepper. Serve cold.
5) Sauerkraut with shredded carrots. Serve cold.
Items #2, #3, #4, and #5 make excellent picnic food.

Brusels sprouts! One of my all time favorite
I make my roasted veggies the exact same way! They are delicious and so great to have on hand for the week! My favorite is roasted baby carrots spritzed with olive oil and a little pepper!
Is it kosher to say my Costco veggies???

I love roasted veggies! Brussel sprouts and asparagus are my favorites, I like them simple with olive oil and a little salt
brussel sprouts are so good on the grill! That and asparagus. yummmm! Lovin’ the new “grill with phil” segments, haha. Too cute!
This may just be my NEW favorite power side dish! I love roasted brussels sprouts bursting with olive oil and garlic flavors! Whole Foods makes some AMAZING ones come November!!
Does it turn out fine roasting frozen veggies? I love RAW, but sometimes the convenience of frozen works better with time!!
