Good morning everyone! How is your weekend going?  I’m headed here soon to train a client and then get in a long run…gearing up for the Half Marathon in almost a month!

Even though we woke up to snow this morning after a beautiful 60 degree day on Friday…I don’t think it’s too early to be wearing bright colors in hopes that Mother Nature takes notice and brings out that sunshine!

Yesterday’s Outfit Of The Day was the sunshine to our rainy Saturday.

During our workout, Corey & I added in some pull ups (assisted for me with band wrapped around the bar). My goal is to be able to string together wide grip pull ups  – which has been my goal for a while now but I’m still working towards it by practicing with bands!

A tip – when you get to the top of the pull up, hold yourself there, then SLOWLY lower yourself back to your hang position. This works the muscles in the opposite direction and can help increase strength to progress towards an unassisted pull up!

Apparently I like to match my shoes, to my tops, to my drinks as well.

My usual gym go to is my VEGA hydrator to sip on during a workout! I love the berry. As much as I love water, I am a fan of something with flavor during a workout.

So after the upper body workout….my jello arms (aka tired arms from a good workout) were indication that I needed to refuel those muscles! I made a new recipe that I will be sharing soon for breakfast, then a few hours later we were in the Mexican mood!

And who doesn’t love some good ol chips and salsa?

Yes, I need to repaint my nails.  Hence the blur in the picture that still didn’t really blur my nail enough, ha.

After the first few bites of chips and salsa…my body started to crave that wonderful food…which is AVOCADO. Then my craving for avocado led to a craving for taco seasoning and thank goodness we had some Trader Joe’s Taco Seasoning in the cabinet!

 

Ingredients:

  • 2 to 3 cups of Kale
  • 1 cup of bagged coleslaw mix
  • A few TB chopped onion
  • 1 TB coconut oil
  • 1 tsp minced garlic
  • 2 TB Nutritional Yeast (aka nooch!)
  • Enough seasoning that your heart desires! I personally can’t handle too much spice so I just added a few teaspoons.
Instructions:
  • Add coconut oil to a pan and warm up on medium heat.
  • Add all other ingredients to the pan & sauté for about 10-15 minutes until cooked down.
  • Serve with rice of choice (I used a quinoa rice blend that we already had cooked up and leftover from the day before), top with avocado, salsa, & protein of choice! YUM!
