“Rhode”Trip with Corey! Eats & Weekend Recap [Part 1]

Hey all! Happy Tuesday! Over the weekend we had a lot to celebrate & today I wanted to fill you in, with pictures, from our “rhode”-trip for Corey’s big move! Sounds kind of like a children’s book title? So chapter 1 of Corey’s big move started with a 9 hour drive that turned into a 12 hour drive.

As with most of my road-trips, a lot of snacking happened. Corey was obviously lovin’ the VEGA bars which I made sure to pack for the whole weekend. So good! I also packed some sandwiches to bring along in a cooler. I made some organic turkey beast sandwiches with guac, mustard, onion, greens, & all on Honey Wheat Bread from Whole Foods. Again, so good!

Another thing I love – these new Apple Bare chips that I found at Costco! All they contain are dried apples with cinnamon & make for a great crunchy snack. Once we got to Rhode Island & into Corey’s new place…we were instantly sold by this amazing view out back. You can’t really tell, but that’s his deck overlooking the water. Um, YES please.

After we unpacked the car, we asked a friend for a nice local spot to go grab dinner. Right by the water is this adorable café called the Beehive Café.

And the food? You may guess what I’m about to say – SO good! I got the lentil salad with mint, feta, & grilled chicken while Corey enjoyed the Beehive Nachos. The next morning we wanted to get up & out early so we could explore all day. It was fun just to plug different places into the GPS and learn about the area.

We grabbed breakfast to fuel up at a spot in Newport called the Corner Café. If you’re ever there – I suggest stopping by this place! The people were great.

I got to sit with teeth boy Winking smile (the nickname I called Corey before we dated and I only met him once, I referred to him as “teeth boy”) and order a Claudia’s Special which is roasted veggies stuffed into an omelet and I added avocado. They have the BEST herb roasted “home fries” and thick cut multi-grain bread. #winning

Bottomless coffee is always a plus too.

We ventured to a place called the “cliff walk” where you can walk along the ocean. We didn’t even realize we’d pull up to park right on the beach. HELLO ocean!

The water was chilly but worth it as I creeped down with Corey to snag this picture. It just so happened to be his first time to the ocean so this moment was pretty cool.

We walked along the miles next to the ocean. A lot of red clay seemed to be on the one of the water. Made for pretty cool pic.

We took a lot of moments to just sit & enjoy, which is something Corey helps me do more of. We met a gentlemen with the cutest dog named Olivia! She came over to say hi while we talked with her owner. He brings her out most days for a walk. How cute?

Came across this “LOVE IS LIFE” written on a bridge we went under. I couldn’t help but copy the girls in front of me who took a similar picture. There were a ton of hidden gems along this path so I totally suggest checking it out if you’re ever in the area!

After a day of exploring, we wanted an EASY dinner. Which meant, grabbing a Mediterranean pizza from the freezer section of the store & whipping up a salad to go along with it.

Greek Yogurt Dill & Feta dressing (my new favorite!), & Kashi pizza.

Enjoyed the meal, met up with some new friends, & then headed in for the night before day 2 of our weekend! I’ll post more on that next but it was a great start to a new adventure. It was pretty awesome just to go with the flow, have no agenda, & just let life happen.

    Looks so yummy. Don’t you have a hard time eatting gluten?

      It was yummy! 😉 I actually just posted recently about how I’ve been introducing gluten back in to my diet in moderation and so far so good. With me, I’ve found, that if I “over-do any type of food my body tends to react so variety has been key for me. #betruetoyou 🙂
