Sweet Potato PIE
I take a yam
& wrap it in a moist
(some people hate that word)
paper towel.
I Microwave it on high for 4-5 minutes,
depending on the size of the yam.
Then I cut it in half & save the other half for the next day at lunch!
I put the yam in a container & Sprinkle with cinnamon or Pumpkin Pie Spice.
When lunchtime rolls around,
I pop the Tablespoon of Coconut Oil (heaven in my mouth)
in the microwave for like 1 minute.
Then POUURRRR over my COLD Yam & Spices!
let it sit for a few minutes, because the coconut oil will get cold & hard on top of the yam
& make the most amazing coconut-y shell on top of the cold yam.
Sometimes I add Raisins!!
