Creamy Coconut CHIA Porridge

CREAMY COCONUT CHIA PORRIDGE

Ingredients:
2 TB Coconut Flour
2 TB CHIA Seeds
1 Cup of Water (or milk of choice)
Sweetener of Choice (I used STEVIA)
Vanilla & Cinnamon

In a bowl Mix all of the ingredients!

Let sit for an hour

(I let mine sit OVER NIGHT)

It will look like Cottage Cheese…

usually I would like this but I thought the

consistency was a little weird

so I ADDED 1/4 cup Coconut Milk
& blended it in my MAGIC BULLET for about 30 seconds!

& BOOM!

You’ve got CREAMY PORRIDGE!

I sprinkled it with cinnamon & paired mine with Veggie Omelet.

& some GRAPEFRUIT
for a perfect complete POWER breakfast!

    Wow – just made this and it was soooo yum. Thank you!! I loved your recipe bc it’s so simple, sugar free, raw and easy. Everything I needed. I actually didn’t bother letting it sit. I made 1 1/4 coconut milk in my blender (1 1/4 C water and 1/4 dessicated coconut), added flax (instead of chia -wanted the color of them), vanilla, little salt,cinnamon, stevia to taste, blended all well then poured into bowl to which I added the coconut flour and adjusted vanilla and salt to taste (didn’t put coc flour in blender too as wasn’t sure how thick mix would become and can be hard to get stuff out of blender if a thick). AMAZING. Then I added porridge to a saucepan and very gently warmed (so mix would stay raw) then poured into a pre-warmed bowl. I topped with nut butter, more cinnamon and some raw rubbarb I’d specially prepared. Loved it – perfect look and to me, texture, taste and consistency. Thank you again for such a great recipe.

    This was GREAT! My 2 yr old loved it. I’ve been searching for a cereal that doesn’t have nuts in it. I added 1/2 cream and raspberries – so good!
