I used one of my new favorite RED ingredients to top
one of my new favorite breakfast #powermeals!
Carrot & Zucchini Bread Bowl “OATS”

Blend in magic bullet your wet ingredients:
1/4 chopped Zucchini
4 chopped Carrot Sticks
1 cup of liquid
(I did 1 cup unsweet coconut milk + 1/2 cup water)
Cinnamon
Few drops of Liquid Stevia
Vanilla
Nutmeg
Add Wet Mix To:
2 TB Coconut Flour
2 TB Chia Seeds
*Mixture will thicken –
You may want to add 1/2 cup more of liquid!
Topped with protein powder mixed with
coconut milk to make a “frosting”,
pumpkin seeds &

I love this recipe and it will be the perfect breakfast tomorrow! I’ve never tried goji berries, but I have to say; I get very curious when passing them at the store. Orange will be super easy tomorrow…I’ve got tons of butternut squash in the fridge.

Heard about them for a couple years now…
I’ve made this a few times, but in my Vitamix and it always comes out soupy…it’s not thick like yours! Can’t figure out why. Today I added some spinach to thicken it up…I guess I should start with less liquid (I’ve tried 1 1/2 cups and 1 cup). Hmmmn…
I would definitely descrease the liquid! I am sorry it’s not working for you!! I promise it will if you reduce liquid & let sit for a while to “gel” ! hope this helps!!
