Powermeal A Day- “PURPLE”

Today’s POWERMEAL A DAY CHALLENGE TOPIC IS
PURPLE!

NEW JUNEEE

And one of recent favorite
purple foods is BEETS!

Two different ways that I’ve been preparing them.
ROASTED & FRIED!

Roasted Beets

1 Beet
3 TB Olive Oil
Sea Salt & Pepper

1) Chop your beet into chunks

I promise this is not a murder scene,
I just thought my cutting board looked cool
after I chopped beets, watermelon, & mango Winking smile

put beets into a pan (I used a foil pan)
add your olive oil and seasonings & mix together!
Cover pan with Foil & bake at 350 degrees
for about 45min-1hour

They should be tender!

Another one of my favorite ways is to “FRY” them in Coconut oil!
just like my “Fried Bananas

“Fried” Beets
(in coconut oil)

Basically the same as before;
cut your beets into slices instead of chunks!

Put your slices onto a medium heat pan with 1-2TB coconut oil
& “fry” until golden brown on each side!

*I served them up along side some grilled chicken
& roasted brussels!!

& I wanted to share this with you his segment on beets!

Basically he says that beets can boost your athletic performance,
helps fight cancer because of their pigments that help prevent cancer cells,
they help with weight loss based on their low calorie content and higher fiber content,
& also reduces inflammation

*I’ve also been loving this beet probiotic drink
that I found at a local grocery store!
Made from beets, sea salt, live active culture, and raw green stevia!

So as you can see, there are many ways to incorporate beets &
PURPLE
into your POWERMEALS!!

    Blueberries are my favourite in oats, but strawberries are definitely my favourite on their own. I can’t get enough of berries this season, except I don’t like raspberries…

  4. I’m definitely going to try an oat parfait… I always get bored eating them because it just seems like a big brick… a delicious brick, but a brick nonetheless. Maybe this will help spice them up and make breakfast more of an adventure.

    …because foodies always have adventures at meal time ;)

  5. LOVE blueberries!!!! Blackberries sometimes look blue or purpleish.. love them too! :-)

    Love roasted beets. I put them on my salads and top with feta….yum.

    I also love eggplants roasted in the oven with olive oil. I layer them with fresh mozzarella, basil, and straight from the garden tomato slices. Go purple!!

    Just found your challenge through the athletarian, and ironically I made roasted beets yesterday as well!!! So I guess I got my purple on, and it’s too bad I am taking a rest day today, but my favorite pre-workout snack is definitely larabars or lunabars!
