Pumpkin Powercake

 5 Egg Whites

2 TB of Flax
(or flour, or protein powder)

 2 TB flour of choice

1/2 Cup Canned Pure Pumpkin
(not pumpkin pie mix)

  1/4 cup of Coconut Milk
(any liquid will do)

1 cup of Frozen Spinach

1/2 tsp Baking Powder

I also added vanilla, cinnamon, 

nutmeg, ginger,

& stevia! (or any other sweetener)

 

-Mix all ingredients; 

pour into a microwave safe pie dish;

bake at 350 degrees for 30 minutes!

Topped this one with Peanut Fluff & Coconut Oil
(SUCH A WINNING COMBO!)
