PMAW: Cauliflower Crust Pizza!

hi all!!
I’ve decided to condense my POWERMEAL A WEEK title to PMAW
to make it a bit easier to read my title without a thousand CAP letters!

I know, I know, I get carried away sometimes with my caps lock
but it’s my way of showing my EXCITEMENT about SOMETHING!

So this weekend is crazy busy – as I’m getting my personal training certification!

My mind is on OVERLOAD as I sit here typing this
because we’ve been learning so much in the past 2 days!

Today’s workshop was from 8am-6pm and as much as you would think
I want to MOVE after sitting a lot today, I’m taking a REST day today.

My plan is to get up early tomorrow morning before my test;
Side note: getting up at 6am on a sunday is something I thought I’d never do!

I LOOOVE my Sunday’s for relaxing –
but my schedule is a little off with these classes!
So I’m making it work!!
No excuses!

Plus, I’ll have all night tomorrow to relax and it’s a
good way to get my body moving and blood pumping before I take my test!

So today is OBVI

Today I am sharing with you a
CAULIFLOWER CRUST PIZZA
That I was totally inspired from my girl
Laura!

Check out her original recipe here!

The only tweaks I made since I didn’t have all of the ingredients:

In the crust:

  • I used 2 TB coconut flour in place of quinoa flakes
  • I used 1 whole egg and 4 egg whites instead of liquid eggs.
  • I added some fresh pepper and sea salt into the crust

After you pulverize the cauliflower and mix all crust ingredients;
you roll out the “dough” (fyi: it won’t be very “doughy” like a regular pizza dough)
bake at 425 for 20 minutes between two pieces of parchment paper.

Then after it’s baked; I topped with my
TOMATO POWER SAUCE
2 TB Organic Tomato Paste
1/4 cup organic pizza sauce
&
2 TB Nutritional Yeast

Then piled on the rainbow veggies!

  • spinach
  • cherry tomatoes
  • fresh beets
  • kalamata olives (my addiction)
  • red onion
  • zucchini

Popped that back into the oven for about 8 minutes
so the veggies could get to know each other

THEN!

I was totally inspired by her Instagram pic of this amazing idea…
Cracked a cage free egg right on top
& popped back into the oven for about 6-7 minutes
until cooked just enough so the yolk was still DIPPY! #duh

Then sprinkled with some fresh basil!!

OMG it’s heaven in your mouthhhh.

It may seem like a lot of steps but it’s really EASY!

    i love cauli crust- have some extra in the fridge so i’ll probably make some this week! loving the olive addiction too. i met my quota this weekend i think of olives + feta + goat cheese for the month…except not.
    cant stop wont stop!!

  9. I’ve yet to try cauliflower crusted pizza but this is on my list! Also, I think it’s great that you’re getting your certification. That one’s on my bucketlist! ;)

    I made this tonight. I made the mistake of using wax paper so it did stick on one side. But the other side was nice and crispy. I topped with sautéed onions peppers and grape tomatoes and a drizzle of Tom sauce. I’ll be making this again but maybe using less egg (i used 2 eggs and it was overkill) and more cauliflower. But very filling and Delish!!!!
    Oh and I used 2tbsp of regular flour
