My new $1 Waffle Maker & Pumpkin Buckwheat Waffles!

hey all! Hope you’re enjoying your day (off) today! Winking smile This month I’ll mostly likely be starting all of my posts with some #POWERBOWL highlights from the day before! Although all of them caught my eye, here are few;

Last night I made the boy & I simple #powerbowls for
dinner with some of my [Farmers Market] finds.

Roasted beets, roasted delicata squash, tomatoes,
sauteed kale, avocado, fresh basil, & two poached eggs

So, the other day, not only did I find some awesome foods at the farmers market, but we also hit up some local garage sales. I’ve said before, I swear you get an adrenaline rush when you find something for such a good deal!

Myself & Corey’s mom were at the last stop and we were chatting away to this awesome women who was having the sale. I tend to always be on the prowl for kitchen gadgets or something practical. I happened to look down in the middle of our talk & saw this old school looking iron of some sort. I literally had just told someone the other day that my next purchased would be a panini type grill so I could make some more [Sweet Potato POWERTARTS] & other recipes I’ve had in mind.

Well, wouldn’t ya know, that this gadget was a waffle maker AND griddle AND panini press!

Before I got too excited about the ONE DOLLAR price sticker,I asked the women “does this really work?” And she said “honestly it does! It’s old but we just used it not too long ago during one of our camp trips!”

For a dollar, the risk was worth taking! & guess what – it paid off because this things works like a champ!!

The plates also switch over into griddle plates so you can use it as a griddle or press.

I made some pumpkin buckwheat waffle batter & tested one out. I waited patiently, hoping that I would open up the lid & have a perfectly cooked waffle staring back at me.

Seriously, it’s the little things in life that make me happy! Winking smile Another thing I love about waffle makers is that you can make 4 at one time without any need to flip. This is especially great for when you’re starving after an early morning workout & need to refuel those muscles.

And about those waffles – SO GOOD.

[Serves one hungry Kasey]

  • 1/4 Cup [Buckwheat Flour]
    -Buckwheat is high in protein, fiber, and gluten & wheat free – don’t let the name fool ya!
  • 1/3 cup Pumpkin Puree
  • 1 handful of Spinach (optional – can’t taste it!)
  • 1/4 Cup Milk Of Choice
  • 1 whole egg or 2 Egg Whites (or egg replacer of choice = 2 TB Flax mixed with 3 TB warm water)
  • 1 TB [Flax Meal] (if not using the flax egg)
  • 1/2 tsp baking powder
  • Sprinkle of cinnamon
  • Splash of vanilla extract
  • 10 Drops of [Cinnamon Vanilla Liquid Stevia]
    – or sweetener of choice
  • Handful of blueberries (optional)

Directions:

  • Heat your waffle maker & spray or coat with spray/oil of choice
  • Add Pumpkin, Spinach, Milk, Egg Whites, Vanilla, & Stevia to a blender.
  • Blend until combined.
  • Add wet ingredients to your buckwheat flour, flax, baking powder, & cinnamon.
  • Mix until combined.
  • Stir in your blueberries or other additions of choice!
  • Pour onto the waffle maker & heat for a few minutes on medium setting until browned.

I topped mine with [coconut butter] shell (melt coconut butter, put onto waffles & stick into the freezer until hardened). I do like my food cold so this works for me! Winking smile I also mixed some more pumpkin with cinnamon, vanilla, & a few drops of plain stevia for some pumpkin pudding on top.
