School was cancelled today, so no teaching for me.

Today’s theme for #plantPOWER is Favorite POWERMEAL!
We all know that I LOVE my POWERMEALS!
Definition of a powermeal = a balanced meal with a clean carb, healthy fat,
and a protein source that gives you POWER throughout your day!
They usually look HUGE because they are loaded with a ton of veggies!
Then I add in a protein source & a healthy fat!
I post most of my daily powermeals through Instagram!
Yesterday I posted my
“This is what a #plantPOWERED PE Teacher eats for lunch!”
*Collard wraps stuffed with organic black beans, avocado, & sautéed veggies
with a side of the extra avocado (I never let this go to waste) & some raw tomatoes!
I blanched the collard leaves in hot water on the stove for 1 minute
& then immediately put them into cold water!
Stored them in a plastic baggie over night,
then stuffed & wrapped up in foil for lunch!
Before my #plantPOWER lunch;
I started my day with quick 5am lift sesh (chest & triceps),
then off to teach, zumba with my students,
& then a little more cardio after school
(for no reason other than I had so much energy!)
truly plantPOWERED
After my on-the-go day; this POWERMEAL was EPIC!!
*channeling my inner Heather with some Roasted KALE CHIPS
(chopped kale sprayed with coconut oil spray
with sprinkle of nutritional yeast & Himalayan Pink Salt
into the oven for about 15 minutes at 350)
Topped with red onion, kalamata olives, roasted brussels,
roasted kabocha squash, sundried tomatoes,
& protein packed Kale Hemp Pesto!
Oh. em. gee.

I have to comment to give Muir Glen a shout out for making fantastic no salt added tomato paste. It allowed me to make the competition prep-legal BBQ sauce I posted on Monday. Life saver.

my favorite powermeal is what I’m having today for lunch (basically a ton of awesome stuff just thrown together haha): quinoa, teriyaki tempeh, cucumber, tomatoes, broccoli cole slaw, celery, and hummus!
I make quinoa with mushrooms cherry tomatos celery and whatever else left in my fridge
My favorite power meal has to be some sort of roasted squash with tofu!

i love fire roasted tomatoes! i always add them to “powerbowls!” i love doing a mock burrito bowl and add tomatoes as my “salsa” sometimes! so good!!
My favorite powermeal is a HUGE salad loaded with nuts, seeds, veggies & protein! mmmmm! I could never get sick of a good old POWERbowl!!
i don’t have a set favorite powermeal — i’m like you, to me a powermeal is throwing a bunch of healthy veggies and protein in a bowl and mixing it up, experimenting with different flavor combos!
today i’m having a powermeal/powerbowl for lunch — plan to post on instagram later: romaine and cabbage, chick peas, vegan “salami” slices, hot pickled cherry peppers, hearts of palm and artichoke hearts, red onion, cucumber, tomato, olive oil and lemon juice! kind of italian antipasto-type flavors, but in a vegan salad — fantastic!

My powermeal is Kale salad with olive oil and lemon dressing with tuna and avocado.
My favorite powermeal is a pizza made with cauliflower crust and loaded with veggies and a side salad loaded with more veggies.
I enjoy starting the day with a hearty bowl of oatmeal with a sliced banana, cranberries and raisins and add a shake of cinnamon on top too! Thanks for the giveaway!
My favorite powermeal is quinoa, lentils, peppers, spinach, cucumbers and green onions mixed together greek style with lemon juice, oregano and olive oil!
My favorite powermeal has got to be my huge salad I eat everyday. It’s always different, but today it’s Mixed greens, tomato, hard boiled eggs, kalamata olives, artichoke hearts, bell peppers, mushrooms and pepitas!
Mmmm powermeal: Spinach salad w/sauteed tofu and roasted butternut squash and apples (dressed with a drizzle of olive oil). My dog loves it, too! (Really.)

My powermeal healthy chili, with chickpeas and avocado
I’m a big fan of pretty much any powermeal. I especially love any combo that includes kale, quinoa, green peas, and cashews. And carrots. And brussels sprouts. And… pretty much everything
My power meal would have to be a bowl bowl filled with roasted bussel sprouts, kabocha squash, zucchini, red bell peppers, spinach, topped with fried eggs, avocado, a good sprinkle of nooch all covered in olive oil!
Love making raw zucchini noodles with a homemade tomato marinara sauce!
My favorite powermeal is a massive salad with plenty of plant protein toppings!
Mmmmmmmmm! You’ve already given me some great ideas. Right now, my favorite power meal is sauteed (in olive oil) onion, fresh garlic, zucchini, yellow summer squash, red bell pepper and one Smoked Apple Sage Field Roast (vegan) sausage link diced. I add a little bit of Goya Recaito (cilantro based seasoning) towards the end, along with a little salt and freshly ground pepper. Then I spoon it onto a small bed of brown and wild rice that I cook up in advance for the week. The Field Roast has 26 grams of protein per link and only 240 calories – and none of it is soy protein. I like to chow down on this an hour or two before I work out with my Hubby because it keeps me going.
BTW, have you tried Muir Glen’s split pea soup. It’s to die for! I eat a couple cans each week. Makes a great quickie lunch.

My favorite powermeal is a huge plate of mixed greens with lots of veggies, some protein and cooked cold chunks of squash, drizzled with EVOO and balsamic vinegar and chopped fresh herbs.

Chocolate, banana, cinnamon, and nutella smoothie after a workout! It’s the only thing that tames my hunger.
My go-to power meal is a big hot pot of veggie chili – perfect for those cold winter nights! Loaded with tomatoes of course!
