What’s up my friends! How are you!? So sorry for being MIA – I’ve been getting my feet on the ground here in San Diego and have tons of new content to bring your way!

With a schedule that’s a bit all over the place right now, having super quick options for dinner has been KEY! Meal prep Monday anyone? I’m all over it!

One of my favorite go-to options for a quick meal packed with protein? Lightlife Tempeh!

I’ve been a huge fan of Lightlife Tempeh for years now thanks to my girl Heather Waxman who turned me on to it.

At first I didn’t know what to make of this block of beans as I wasn’t too sure how to go about utilizing it. My girl Heather used it often & she would just sometimes snack on it raw – which is totally fine since the beans have already been fermented.

Lightlife has been around since 1979 and their mission is clear, “We’re in this business because we care about the food that people eat and the Earth on which we live, and we go to great lengths to ensure our customers get the very best.”

Lightlife is known for multiple plant based products & one of their most popular being Tempeh.

Tempeh is a traditional soy product originally from Indonesia, made by a natural culturing and controlled fermentation process. Tempeh begins with whole organic, non-GMO soybeans and easily absorbs the flavors of any recipe.

*One package of Lightlife original soy tempeh provides 44g of protein, your daily recommended intake of fiber, and key nutrients like calcium and iron.

I personally like to use half a block for an awesome protein & fiber packed meal.

My go-to way of preparing it is to spray or add a bit of cooking oil to a pan and have the temperature to about medium, I’ll let it cook for a few minutes on one side til’ it is browned & then flip and repeat.

Tempeh also will absorb flavors you put onto it or let it soak in before cooking. Another great way to eat it is to baste it with BBQ sauce of your choice before cooking.

I personally think Tempeh has a “nutty” flavor to it especially when it is cooked.

My friends at Lightlife are being awesome & giving away 3 free product coupons so that’s 3 winners for your choice of product!
