With a (much needed) wild Saturday…under my fuzzy blanket watching college football. Yes, I am an animal! But in all honesty, I secretly love the first day where it’s super chilly & rainy on the, on a weekend especially, whenever I can just cuddle up, take a nap, & enjoy.
I must have been tired from my night out before to the mall & Mexican food date with my girl Sarah –
I think I replaced my usual sunday relax day with my saturday since I’ve got some plans up my sleeve! I’m headed soon to meet my girl Jen for a fun workout followed by a Girl’s Night In at a local university to do some fitness & food tips for college students!
Even with a busy Sunday afternoon, I still took time to enjoy my beloved Sunday morning…
Coffee followed by some Pumpkin Orange Powercakes was on tap this morning. Fueling up for my training with Jen! I’m not 100% sure of the measurements I used but it went a little something like…
- 1.5 cups Organic Whole Wheat Flour
- 1.5 Cups Rolled Oats
- 1 Cup Pumpkin
- 1/4 Cup Flax Meal
- 3 Eggs
- Zest of an Orange
- Juice of 1/2 of the orange (I snacked on the other half)
- 2.5 Cups of Almond Milk (or until batter is good consistency)
- Vanilla Extract
- Pinch of Sea Salt
*Mix all ingredients & cook on a medium heat griddle with some coconut oil until bubbly. Flip over & cook for a few more minutes & enjoy!
Whelp, that was my super enjoyable weekend & now I’m off to see my girl Jen & my college ladies for a fun night!
