Honey Pumpkin Butter Chia Yogurt Powercakes!

Hey all! Happy Sunday! Spent the day yesterday with my good friends Jeff & Kateri as we cheered on our friends Tara & Lauren in their competition! They did SO great and we are so proud of them Here’s a tip if you’re ever cheering for someone – bring your daughter’s Glow Pad so they can see you from stage! haha, thanks to Jeff  & Kateri’s 3 year old daughter CC for letting us borrow it for the day.

After the show, we headed back to Kateri’s parents for some home made lasagna! It tasted just like my Grandma used to make & they even use Gluten Free lasagna noodles which definitely was appreciated.

This morning I got to sleep in a bit – which was great after a nice busy 6 day week – and I couldn’t wait to whip up some Powercakes with my new Pumpkin Butter this morning!

Found it the other day at the local grocery store & I’ve been loving it since. Made Powercakes with some ingredients we had on hand, topped with Pumpkin Butter & Honey, side of coffee and my day has officially been started.

Serves 1 or 2 if you are willing to share…
but this morning I wasn’t in the sharing mood Winking smile
plus Corey already had plans to grab brunch with a friend – so I’m not thatttt selfish.

Ingredients:

  • 1 Cup of Rolled Oats Ground Into Flour
  • 1/2 Cup Organic Greek Yogurt
    (Could sub non-dairy yogurt of choice)
  • 2 Eggs
  • Splash of Milk Of Choice
    (Just enough to make it a nice thick batter or thickness of choice)
  • 2 TB Chia Seeds
  • Cinnamon To Taste
  • 10 Drops of Liquid Stevia or Sweetener of Choice
  • Sprinkle of Sea Salt

Toppings:

  • Pumpkin Puree or Pumpkin Butter
  • Honey of choice

Instructions:

  1. Pulse your oats in a food processor or blender until a fine flour forms.
  2. Add the rest of the ingredients into a bowl & mix until combined.
  3. Pour powercakes onto a medium heated pan coated with coconut oil or oil of choice.
  4. Cook a few minutes on one side and then flip to the other for a few minutes.
  5. Top with pumpkin butter & honey and DIG IN!
