This whole week, we’ve been focused on learning to listen to our bodies and overcome the fear that we will somehow be “less than” if we do not work out. I hope that you are enjoying the process so far and also trying new, nourishing foods.
If you’re like me, you can relate to my constant craving for comfort food. Ever since switching to plant-based eating, my gut has never been happier. One misconception is that I don’t get to enjoy “normal” food; but what really is “normal?” I remember always trying to strive to be normal and feeling totally defeated if I felt like I wasn’t like everybody else. In reality, my normal is 100% different from your normal. That’s the beauty of being true to YOU. It’s finding your normal and owning it! No one can tell you are not “normal” because I bet no one could tell you what normal really is. BOOM! Preach it, sister! (<—added by Heather )
When it comes to cravings, I find that my body craves nutrient-dense foods. Even though spring time is among us, that doesn’t mean we have to give up the warm comfort of roasted root vegetables! I love to warm my soul with a nice bowl of roasted veggies. I’ve included a recipe with my favorite way to make them but feel free to #beTRUEtoYOU and use whatever vegetables your soul desires!
- 5 parsnips
- 5 carrots (orange, purple, yellow)
- 2 whole beets
- 1 sweet potato
- 1 Tbsp melted coconut oil
- Sea salt & pepper to taste
- Wash & Peel the vegetables.
- Cut Vegetables into the same size for even cooking time throughout.
- Heat up coconut oil in microwave for about 30 seconds or on the stove.
- Put vegetables onto a cookie sheet & pour the coconut oil over them.
- Coat the vegetables with the oil.
- Roast at 350 degrees for about 35-40 minutes until tender.

- Roasted veggies can be enjoyed any time of the year!
- They are a reminder of cozy, sweet, and warm moments that we savor.
- Coconut oil can help our bodies resist viruses and bacteria that cause illness and can help fight off yeast, fungus, and candida.
I love to cozy up with a bowl of roasted veggies topped with some hummus, beans, nutritional yeast, hemp seeds, or avocado for a dose of healthy fats & plant based proteins! This mantra is beautiful but it won’t work if you neglect to visualize yourself as healthy, strong, and everything you desire. This is a really big statement and it’s important that we get clear about how we want to feel before we put these words into practice. Go ahead and push play on your #RESTWEEK Playlist. Stop for a sec, close your eyes, and ask yourself, “What does it feel like to be healthy and strong?” Let go and allow your intuition to take over and see the image of yourself as healthy and strong.
What did you see? When I envision myself healthy and strong, I see myself standing on top of the Grand Canyon in a cute sporty outfit (sorry, not sorry). The sun is shining and my hands are on my hips. I’m looking out at the gorgeous and seemingly endless sight of rock and rubble and I’m FREE. I feel free, inspired, and supported by the Universe. With that, clear vision, I know that I already am everything I desire because I feel that way. And so are you! Take your own vision with you today and repeat this mantra to yourself all the live-long day. You don’t have to “become” the person you saw in your mind. You already are that person. Give yourself permission to release whatever is blocking you from being that person. xo
