Creamy Power Pumpkin Seed Butter [Vitamix Giveaway!]

Happy Tuesday all! Can you believe there is already OVER 670+ entries for the Vitamix Giveaway!? Actually, I’m not surprised. This product is worth the hype! I think we’re en route to a new Powercakes Giveaway record number of entries. You all ROCK! Just incase you didn’t already know that. Winking smile

Today I’ve got a new recipe for you that not only is DELISH on it’s own…but I rolled it over into a savory recipe for tomorrow!

Oh, & did I mention there is another giveaway tomorrow? Yup.

The first recipe I wanted to try whenever I received the Vitamix was NUT BUTTER! How awesome that I can now make my own without blowing out my blender motor? I didn’t have peanuts on hand, and I was antsy, so I grabbed some pumpkin seeds which resulted in the above picture. Aka a bowl of creamy-deliciousness.

TIP: I first, being antsy, jumped into using the smoothie cup but then quickly found out that I needed the help of the tamper (the stick-like tool that helps push the ingredients into the blades), to help my motor from being ruined. You see…the tamper helps circulate the seeds/nuts so they don’t just get stuck and cause your blade to wonder why it’s spinning.

I used about 2 cups of seeds into the container.

  1. Pour seeds or nuts into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High, using the tamper to push the ingredients into the blades. (this is KEY!)
  4. In 1 minute, you will hear a high pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change from a high pitch to a low laboring sound. Stop machine.
  5. Store in an airtight container. It can also be frozen for longer storage.

CAUTION: Over processing will cause overheating to your machine. Do not process for more than 1 minute after mixture starts circulating freely.

NOW – For a recipe variation and how I made it even more CREAMY was that I added about 1/2 cup of Almond Milk to the butter & continued to process.

Once it was creamy consistency, I added some sea salt.

You could also add some sweetener if you desire – honey, maple syrup, coconut sugar, or stevia would be great!

So you may be thinking this would go great on toast, crackers, powercakes, or to dip fruit/veggies into…and truth be told – you’re right!

BUT tomorrow I’m bringing to you a creative way that I used my Pumpkin Seed Butter that involves ANOTHER giveaway.

That’s right – TWO giveaways in ONE week and the next one is kind of spicy Winking smile hmmm…
