Greek Cauliflower Rice 1 head of Cauliflower – “Riced” (cut into small pieces and pulse in a food processor until rice texture) 2 Grated Carrots 2 Cups of chopped Kale 1/2 cup of pitted & chopped Kalamata Olives Mix together with: 1/4 cup Apple Cider Vinegar 1/2 cup of Nutritional Yeast 1/4 cup EVOO few drops of stevia or 1 TB Raw Honey Sea Salt + Pepper This was a great combo & a way to get the veggies into your day! ROUND 6 OF POWERMEAL A WEEK CHALLENGE! So excited to share with you a SAVORY YAM POWERCAKE 1 cooked yam 350 degrees for about 35-40 minutes 1 TB coconut flour 2 TB chopped red onion 2 TB Shredded Carrots 2 TB Shredded Zuchinni Sea Salt & Pepper To Taste 3 egg white (to hold it together) Mix ingredients and form into a POWERCAKE put into a medium heat pan with 1 tsp coconut oil and cook on each side until browned!
