I have so many #plantPOWER recipes saved up to share with you!
Today I’m starting with an awesome breakfast & post workout #powermeal.
At our house, mamacakes loves to shred veggies down for the week for our baked goods;
Our favorites are carrots & zucchini!
*They will last for a few days in the fridge.
I used the carrots to make a layered POWEROAT parfait after
one of my morning workouts to refuel with clean carbs & protein!
Carrot Cookie Cake PowerOAT Parfait.
I used my Sugar Cookie PowerOATS recipe
& added some pumpkin pie spice! about 1/2 tsp.
You could also do this unheated if you melt down the coconut oil
& mix all ingredients the night before so that it thickens over night!
*layered with shredded carrots
& 1.5 scoops of sunwarrior protein powder
mixed with coconut milk until thick!
Topped with some shredded coconut!
YES. PLEASE.
Perfect combo of proteins, healthy fats, & clean carbs!

Sugar Cookie PowerOATS sounds pretty darn delicious – I’m going to have to give this a try! I’ve been whipping up Clean Apple Pie Smoothies for my pre- or post-workout eats this week. Tastes decadent, sticks with ya and is really healthy!!
